I tried to explain that I had just been at a food conference, feeling mildly defensive like I needed to explain myself and my bushel of bars.
But really, does one ever need to explain traveling with precious delicious cargo?
When we got home, I had every energy bar not yet sold in stores but I didn’t have a simple jar of peanut butter, so I decided to make my own.

This snacking situation requires a little backstory, so let’s rewind to last week.
I was definitely stress-eating a lot, nervous about the upcoming trip and deadlines and traveling logistics.
Amidst my nervous packing, I dug into a bag of banana chips and absent-mindedly dipped the yellow ovals in a quickly disappearing jar of peanut butter.

I’ve always been a peanut butter girl, but cashew butter sneaks up on me quickly.
This roasted peanut-cashew butter is roasty, toasty, nutty, and smooth, requiring only two ingredients: peanut and cashews.

I’m genuinely surprised that this is my first nut butter recipe on the blog.
What took me so long?
Well, usually I’m too enamored with my store-bought favorites to bother to whip up my own.
Homemade nut butters, though, are truly are something different entirely.
The peanut-cashew blend is hard to come by in stores, too, so making your own gives you the chance to experiment with different nut variations!
I used a Vitamix to blend this nut butter quickly and efficiently and in under 3 minutes I was licking the toggle clean.
If this is your first time making nut butter, too, this is the perfect recipe.
Try starting with softer nuts like peanuts and cashews; they’re great starter nuts that break down easily into a butter.
Why Make Your Own Nut Butter
I like my nut-butters to be totally oil and sugar free, and most of the time, salt-free too.
Making your own means you can control what goes into your Roasted Peanut-Cashew Butter, so it can be as plain or complex as you want it to be.
Some optional mix-in ideas are: raw cacao powder, protein powder, cinnamon, dried fruit, sea salt, etc.

2-Ingredient Roasted Peanut-Cashew Butter & Banana Chips without any added oils or sugars. Try this combination for a fun nutritious snack.
Ingredients
- 1½ cup dry-roasted peanuts
- 1½ cup dry-roasted cashews
- 1 bag Bare Snacks Simply Banana Chips
Instructions
- Roast your nuts if you haven’t already done so. If you haven skip ahead to step 3.
- Pre-heat the oven to 350°F and line a baking sheet with a silicone baking mat or parchment paper. Spread the nuts into an even layer and bake them for 8-10 minutes, or until they’re golden brown and fragrant. Remove from the oven and allow to cool slightly.
- Pour nuts into a high-speed blender (I used Vitamix) or food processor.
- Starting on the lowest setting and gradually increasing in speed and power, blend the nuts. They should go from nuts, to a crumble, to a flour, to a sticky mixture, to a butter in less than 2 minutes.
- If using a tamper, use it here to press the ingredients into the blades.
- Stop the machine for temporary pauses as needed if it gets overheated. The nut butter is done when it runs freely through the blades without any nut-clumps.
- Transfer the nut butter to an airtight container and store in the refrigerator for several weeks.
- Serve it with simply banana chips for dipping.

Can you replace peanuts by almonds? If yes, do I need to peel the skin?
Hi Nishi! I haven’t tested almonds here. You don’t need to remove the skins. They’re a firmer nut, though, so I suspect they’ll take longer to blend and will change the taste profile. Let me know how it goes if you try!
