Did you guys grow up eating jello?
My mom made it for us sometimes in a large baking dish that I pulled from the fridge and cut giant squares of.
Cherry as my favorite flavor.
The cafeteria at my school sold jello too, a questionable jiggly block that no one ever really grabbed.
I definitely didn’t.
Anyway, it’s been a while since I’ve had a cup of jello.
Honestly, I thought my jello days were over after going plant-based vegan.
Can you make jello with gelatin?
I’m so glad you asked.
Why, yes. Yes, you can!
These 2-Ingredient Vegan Jello Cups (No-Sugar-Added!) are made with real fruit, no added sugar, and agar agar seaweed flakes!
You only need 2-ingredients to make vegan jello:
- no-sugar-added fruit juice
- Eden Foods Agar Agar Flakes
That’s it!
The first ingredient is all-natural fruit juice.
So, what fruit flavor are you feeling?
I used grape juice in mine, but any fruit juice will work.
Try to find one that’s 100% juice with only fruit listed on the ingredients and zero added sugars.
Some other juice ideas that would make delicious jello are: apple juice, pineapple juice, or orange juice.
No green juices, here, though, because we want the full effect of the natural fruit sugars to sweeten the jello.
The second ingredient is Eden Foods Agar Agar Flakes.
Have you ever worked with agar agar before?
Sure, I’ve made sushi, but that’s the extent of my sea veggie exploration.
Until now.
I had SO much fun working with agar agar in this recipe.
These sea vegetables flakes are an odorless and tasteless gelatin with versatile thickening properties.
Add them to pie fillings, jellies, preserves, and custards to thicken them up without any added gums, starches, or dairy!
The only ingredient is Agar Agar Seaweed.
The seaweed is washed, boiled to a gel, pressed, then frozen.
The resulting agar agar is shaved into flakes that we can add to this jello.
It truly is magical!
The method is simple.
We add the fruit juice and agar agar flakes to a saucepan over medium heat.
I like to whisk constantly in the first few minutes to encourage the agar agar flakes to dissolve.
Once the mixture reaches a low boil, set a timer for 5 minutes.
After the 5 minutes are up, pour the warm jello into glass jars and refrigerate until it’s firm and chilled.
It’s magic!
These 2-Ingredient Vegan Jello Cups (No-Sugar-Added!) are a fun healthy snack or dessert!
They’d be great to mix up with kids for a plant-based alternative to the classic Snack Packs.
Try making 6-8 individual cups and serve throughout the week for a grab-n-go snack.

Description

Ingredients
- 4 cups no-sugar-added fruit juice (I used grape juice)
- 6 TBSP Eden Foods Agar Agar Flakes
Instructions
- Add fruit juice to a large saucepan and sift in the agar agar flakes.
- Heat over medium, stirring frequently, until all of the agar agar flakes are dissolved.
- Bring the mixture to a low boil, then simmer for 5 minutes.
- Remove from the heat, allow to cool slightly, then pour into glass jars.
- Cover and place in the refrigerator to chill and set. Serve after 1 hour or when fully chilled and firm to the touch.
- Store leftover jello cups in the fridge for up to one week!
