Vegan Meal Prep Recipe Round Up by Flora & Vino

Hi, friends!

January is stereotypically the time of year of start plans.

New workouts, new diets, resolutely resolving to break bad habits and add healthy routines.

By now, you might have heard me talking about the cookbook that I’m working on.

The theme is Vegan Meal Prep and includes mix and match recipes for how to be plant-based even when life is crazy (which it always is– right?).

It’s funny, because I feel like I’m carefully crafting a product that I would  love to consume.

Meaning, that yes, I too, would covet a collection of vegan & gluten-free recipes that take the guesswork out of meal time.

So I’ve been working my way through the F&V archives, drawing inspiration from my favorite easy-to-prep plant-based recipes.

While making my meal prep list, I thought, why not share this resource with you guys, too?

If you’ve been here a while you know that all of the recipes on Flora & Vino are pretty darn simple with minimal ingredients.

Therefore, it could easily be argued that *all* F&V recipes are meal-prep-able.

However, there are definitely some that fit more conveniently into the meal prep lifestyle more than others!

In this Vegan Meal Prep Recipe Round Up you’ll find Grab & Go Breakfasts, Quick & Easy Lunches, Portable Snacks, Sheet Pan Meals, One-Pot Soups & Stews, Easy Dinners, and Fuss-Free Desserts.

Everything you need to make plant-based eating easy and fun all week long!

Chickpea Meal Prep Bowl served in a bowl with Turmeric Tahini Dressing by Flora & Vino

I’ve been happy lately, friends.

Maybe it’s the warmer weather, or maybe it’s just a newfound perspective this summer.

It feels like things are shifting, changing, and becoming.

Like good things are on the tip of my tongue, about to spill over my lips and into fruition.

I’m emerging from quarantine feeling the vibration of potential and possibilities that the remainder of the year allows.

My intention for 2020 was *forward* and I’ve definitely tested that two syllable word to the fullest in the past month.

Shedding old identities, stories, and thought patterns and trying on new ones.

In the midst of all of this self reflection and discovery, I haven’t really wanted to cook fancy meals.

In fact, I haven’t been thinking much about food at all.

There, I said it.

But, in the midst of so much change, we still need to eat and eat well.

This Chickpea Meal Prep Bowl is perfect to make for an easy plant-based meal!

Big & Spicy Hummus Meal Prep Bowl with quinoa, black beans, and raw veggies with hummus, avocado, sriracha, cilantro, and fresh lime. Perfect for meal prep!

Big & Spicy Hummus Meal Prep Bowl

Does anyone else go on epic food routine streaks?

Once I find a combination that I like, I do it on repeat until the thought of repeating it makes me feel a little nauseous.

No one can ever say I’m not committed in the kitchen.

Right now, I’m in a big quinoa bowl phase.

My commitment to my latest and greatest recipe is a bit staggering, I must say, and I’m just hoping that doesn’t mean I won’t be sick of it come July.

Because I’ve been making this Big & Spicy Hummus Meal Prep Bowl nearly every day for two weeks.

Come on, get a little obsessed with me, won’t you?

Cinnamon Raisin Cookie Baked Oatmeal

Cinnamon Raisin Cookie Baked Oatmeal for a breakfast that tastes like the classic cookie. Meal prep a pan and reheat for an easy breakfast!

Cinnamon Raisin Cookie Baked Oatmeal served on plate topped with SunButter and maple syrup and cinnamon with a fork

This is the story of my engagement.

On Halloween last week M and I hiked into Great Falls National Park where he got down on one knee and presented me with a diamond ring and a question.

“Would you like to marry me?” he asked, the midday sun creating fiery colors in the pear shaped diamond in yellow gold.

“Yes!” I said immediately, wondering if I had responded too quickly.

We kissed and M slid the diamond onto my ring finger as people I didn’t know were there gave their congratulations.

So, friends, I am engaged.

The funny thing is that I almost didn’t want to go on this hike that I realize now M was carefully planning.

There was really high winds forecast for the day and that felt like reason enough to curl up at home and read under blankets.

I’m forever grateful that we ended up going and I braved the discomfort.

Great Falls has always been a special place for us in our relationship.

It’s the first place M taught me to climb outdoors in the height of the pandemic, and a place we kept coming back to for hiking, climbing, and nature.

Standing on top of Sandbox Overlook with my new fiancé, my best friend, this man who has chosen me forever, I didn’t feel the windchill a bit.

The last week has been a bit of a blur with engagement announcements, living in our own “honeymoon” bubble, and making tentative plans for the future.

Being newly engaged, I’ll admit, I haven’t been the most creative with food.

However, I did come up with a new baked oats recipe for you that’s essentially a cookie in baked oats form.

Can you tell that I was craving cookies when I created this Cinnamon Raisin Cookie Baked Oatmeal?!

Blueberry Stovetop Oatmeal

Blueberry Stovetop Oatmeal made brilliantly blue in 15 minutes. Top it off with your favorite nuts, dried fruit, and seeds.

Blueberry Stovetop Oatmeal served on wooden pedestal with scattered blueberries and walnuts with spoon

Last weekend, I attended our Philosophy section of my 300 hr yoga teacher training program.

To prepare for the weekend, we read the entire Bhagavad Gita and answered a series of question prompts on identity, ethics, and right action.

If you haven’t read the Bhagavad Gita, it’s a part of an epic poem that takes place on a battlefield where the warrior king Arjuna converses with Lord Krishna.

The battlefield is a metaphor for life, and the lessons Krishna imparts on Arjuna are both powerful and very applicable to our modern society.

During the session, we shared our responses honestly and openly.

We identified our personal battlefield, narrowed in our dharma (duty), and started to understand our attachments and why they cause suffering.

I left the weekend, mind whirling with ideas, questions, and all of the tools to continue the practice of svadhyaya (self-study).

When prompted,  I told the group that I felt that my dharma in this lifetime was to be a creator.

Whether it’s writing a post, photographing a recipe, styling a plate, or sequencing a yoga class, it’s all from the same energy.

I want to continually put love out onto my website, social media, the yoga studio, your email box; all of the avenues of connection.

My hope is that I start a ripple that somehow inspires right action in you, whether that’s to make a recipe, start yoga, eat more plants, or maybe just take a bubble bath.

Because if there’s one thing I learned this weekend it’s that we’re all connected.

I love the metaphor of us all being drops in the ocean, all a part of the collective whole.

So, thanks for being a part of my collective, friend!

And now, after my philosophy rant, I have a new recipe for you that is beautiful, nourishing, and seasonal.

This Blueberry Stovetop Oatmeal is made brilliantly blue in 15 minutes.

Top it off with your favorite nuts, dried fruit, and seeds for a fun breakfast for any season!

Banana Oatmeal Chocolate Chips Muffins

Banana Oatmeal Chocolate Chip Muffins made with oats, almond flour, and lots of vegan chocolate chips. Perfect for meal prep!

Banana Oatmeal Chocolate Chips Muffins stacked on cooling rack with blue and white striped towel and bananas and milk jar in background

Last week we spent almost a whole day without running water at F&V HQ.

It was basically camping without the appeal like the nature, campfire, and s’mores.

Apparently a *very* large water pipe burst in our area, leaving us and many neighbors without running water during it’s longer than normal repair.

I definitely panic-purchased water from the store by the gallon, unsure of how long we’d need to get by with empty pipes.

If you’ve never been without running water, it might not seem like that big of a deal.

You might be thinking, “Just go buy some bottled water and you’re good, sis!”

I wish it were that simple.

Sure, with bottled water you can get by with minimal hand washing and hydration, but not much more.

But toilets require a lot of water to flush (1.6 gallons to be exact, I Googled it!), and if you’re without water for many many hours…well, you get the idea.

So the simple act of human-ing felt like a chore on Wednesday of last week, to the point that I almost went to my local gym just to take a shower.

I cancelled my shoot and any recipe creation or food prep for the day, because without running water none of that is possible either.

Gloriously, the water came on around 8 PM and I took the longest hottest shower I could stand and emerged a new woman.

Seriously, though, the whole ordeal was a reminder how precious a resource water is, and the immense privilege in having constant access to it.

So, the recipe I’m sharing with you today does not require any water, haha!

But it is one that I feel grateful to have in my life and made as soon as we had running water again.

These Banana Oatmeal Chocolate Chip Muffins are made with oats, almond flour, and lots of vegan chocolate chips.

They’re perfect for a meal prep snack for the week ahead!

Red Velvet Baked Oatmeal

Red Velvet Baked Oatmeal made with beets, cacao powder, and chocolate chips. Bake it in under an hour for a delicious colorful breakfast!

Red Velvet Baked Oatmeal served in baking dish topped with red berries and SunButter

Timing in life is such a delicate and tenuous balance of push and pull, isn’t it?

When embarking on new adventures, projects, and plans, I often ask myself, is this the *right* time for this venture?

Sometimes there is this knowing that, yes, my energy is aligned and my calendar is open and I want this now.

However, more often than not, the path is not so obviously yellow brick road.

It’s hard for me to accept that, for many things, there is no *right* time, there is only the time you make.

Some things, like moving, having kids, and organizing the attic (yikes), feel too daunting to tackle in the present.

And yet other things I pursue relentlessly, like adding a new puppy to our home, running my small business, and teaching yoga.

We have the autonomy to create these chapters in our lives, and not the other way around.

So, I’m excited to share that I registered for my YTT 300 hr teacher training this April!

Five years after completing my 200 hour training, I’m hungry for more yoga knowledge and excited to apply it to my class.

I’m also hungry for Red Velvet Baked Oats for breakfast.

Valentine’s Day might be over, but I’m still committed to making food pink and red, at least for the rest of February.

Ever since being sick a few weeks back, oats have made a huge comeback for breakfast as a cozy source of nourishment.

These Red Velvet Baked Oatmeal are made with beets, cacao powder, and chocolate chips.

Bake them in under an hour for a delicious colorful breakfast!

Sweet Potato Pie Baked Oatmeal

Sweet Potato Pie Baked Oatmeal made with sweet potato, pumpkin pie spice, and candied pecans. Perfect for a fall meal prep breakfast!

Sweet Potato Pie Baked Oatmeal served in casserole dish with pie server with pecans and oats

Last week I signed up for a 10K run on Thanksgiving Day!

If you’ve been around here a while, you know that I’ve been a runner for over a decade now.

I come and go with the sport, inspired by the seasons and the weather and what races I have on the calendar.

My longest run was a full marathon I did back in 2022, but these days I’m more of a short distance girlie.

When I lace up my runners and hit the pavement now, 3 miles feels tough; forget about 26.2!

But if you know me you know I’m a goal oriented person, and I love having something to work towards and train towards.

I’m in a season of life where dog training is keeping me busy, but making time for personal goals hits differently.

So I hit the “purchase” button when I was all fired up about running and excited to enjoy the fall weather.

Now, I’m feeling slightly sick knowing that this run (and Thanksgiving!) is a short few weeks away.

If there’s one thing I am good at, though, it’s sticking to a training schedule.

Well, and making new variations of baked oats to enjoy.

I’m counting on these Sweet Potato Pie Baked Oatmeal to keep me fueled this fall as I get back on track with running again!

This dish is made with mashed sweet potato, pumpkin pie spice, and candied pecans.

It’s the perfect energizing fall meal prep breakfast to support your lifestyle with complex carbs, protein, and healthy fats.

And, it would be a fabulous Thanksgiving breakfast for the whole family!

Pumpkin Stovetop Oatmeal

Pumpkin Stovetop Oatmeal made on the stovetop in 10 minutes and served with nuts and dried fruit for a fun and fast fall breakfast.

Pumpkin Stovetop Oatmeal served in a bowl topped with pecans and dried blueberries

After Labor Day, bam, it’s time to eat all things pumpkin.

This is one social expectation that I am perfectly happy to fulfill, friends.

For the past few weekends, M and I have been packing up Flora in the car to take her on a Sunday coffee run.

We’ve been doing a lot of car trips and outings with her in general to “socialize” her to people, places, and things in the outside world!

Last weekend, she had her first *pup cup*, which she lapped up great enthusiasm and a newfound interest in our coffee cups.

M tried his first pumpkin spice latte, and I grinned just *smelling* it because it reminds me of being a teenager.

Many afternoons I walked to Starbucks (about a 40 minute walk if memory serves?), grab a warm drink (read: caffeine), then walk all the way home again.

It felt like a little delicious slice of freedom that I could do before having a driver’s license and a car.

Another pumpkin highlight to my very adult week was making Pumpkin Stovetop Oatmeal for a quick and hearty workweek breakfast.

Lately in the mornings it was actually chilly outside when I asked Flora to “Go Potty!” around 6 AM.

This Pumpkin Stovetop Oatmeal is made on the stovetop in 10 minutes and served with nuts and dried fruit for a fun and fast fall breakfast.

It’s not fall quite yet, but it will be soon!

10 Cool Summer Meals

By Flora & Vino Leave a Comment

10 Cool Summer Meals that are chill to make and cool to consume. Ditch the oven and make these light and hearty recipes!

Back during 2020 I initiated a walking every day ritual to get out of the house, get some movement in, and breath some fresh air.

It was an easy, tangible goal that I could achieve even in the height of the uncertainty of COVID.

Walk away from the house and walk back.

My daily walk benefitted me *so* much, I’ve kept it up for the past four years.

Until this summer.

For shame, I really have fallen off of my daily walk ever since we got back from Wyoming in June.

I want to blame the intense heat wave we’ve experienced here in Maryland.

And while that totally contributes (I’m about to sound like a cliché here), it’s the *humidity* that really sends me running back into my air conditioned foyer.

M and I joke about this area being a swamp, because the air is thick, wet, and makes your nose and lungs work to suck it in for respiration.

So while I don’t want to say I’m ready for fall, I’m definitely ready for easier breathing, cooler temps, and walks that I enjoy.

Speaking of the heat and humidity, it’s the worst time of year to turn on your oven!

I made that mistake last week and the AC had to work double hard to cool down the kitchen.

If you, too, are looking for some chill meals to make this summer that don’t require an oven or much cooking at all, I got you.

Check out these 10 Cool Summer Meals that are light, fresh, and cool, but hearty enough to pass for the main meal.

Bookmark this recipe round up for a heat wave!
