Description

No-bake vegan apple butter truffles made with almond flour, warm spices, and dark chocolate. An easy gluten-free holiday dessert!


Ingredients

For the truffle center:

  • 1 cup superfine almond flour 
  • 1/4 cup oat flour (gluten free if needed)
  • 1/2 cup Eden Foods Organic Apple Butter
  • 23 TBSP maple syrup (to taste)
  • 1/4 tsp cinnamon

For coating:

  • 1/2 cup dark vegan chocolate chips
  • 1 tsp coconut oil (optional, for smoother melting)

Optional toppings: finely chopped nuts, cinnamon sugar, shredded coconut


Instructions

  1. Make the truffle dough: In a medium bowl, mix almond flour, oat flour, and cinnamon. Add the apple butter, and maple syrup. Stir until a sticky dough forms. Taste and adjust sweetness if needed.
  2. Chill the dough: Cover the bowl and refrigerate for 30–60 minutes until firm enough to scoop.
  3. Shape the truffles: Using a small cookie scoop or teaspoon, scoop dough and roll into small balls. Place them on a parchment-lined tray.
  4. Coat in chocolate: Melt chocolate chips and coconut oil in a microwave or double boiler, stirring until smooth. Using a fork or dipping tool, dip each truffle into the melted chocolate, letting excess drip off. Place back on parchment paper. Optional: sprinkle with toppings before chocolate sets.
  5. Chill to set: Refrigerate for at least 20–30 minutes until chocolate is firm.
  6. Serve & enjoy: Store in an airtight container in the fridge for up to 1 week.
