When you move do you move with perfectly labeled brown boxes or with trash bags stuffed with random odds and ends?
I started out as the former but on the last day, yesterday, I was tossing pots and pans and appliances and silverware into anything I could carry with two hands.
So now I’m in the new townhome and everything is literally everywhere.
I even hired movers to help with the big ticket furniture items, but it’s really the little things that get you, you know?
Anyway, with moving, I have been the hungriest of hungry hungry hippos.
I lunge at snacks the minute the last box is unpacked, ripping apart energy bars and overnight oats and yogurts and all of my pre-packaged favorites.
Not quite ready to jump into learning how to use my new gas-stove and kitchen, I decided to make something easy but upgraded, with all the fall feels.
I’m loving these Apple Chip Nachos with Date Caramel for an easy fall snack plate that you can throw together in under ten minutes!
What You Need to Make Apple Chip Nachos
These apple chip nachos couldn’t be easier.
We start with an easy 1-ingredient base, courtesy of Bare Snacks Apple Chips.
There was one time a few years ago when I tried to make my own apple chips and they turned out to be a giant flop.
In hindsight, I think my slicing was uneven and my oven temp was too high.
Some turned out slimy and undercooked while others were charred to a crisp.
Oops.
That’s OK, because each Bare Snacks Apple Chip is perfectly crispy straight from the bag.
So I love these baked apple chips that are JUST apples, free of any oils, refined sugars, or anything artificial.
How to Make Date Caramel
After you plate your apple chips, drizzle them generously with homemade date caramel.
If you’ve never made date caramel before, you’re going to love it– it’s a fall staple in my house!
It’s just dates, filtered water, and a touch of maple syrup to make a creamy sweet syrupy dip that’s made with whole foods.
Add more filtered water for a thinner consistency and less for thicker caramel.
I like mine super smooth but not quite pourable.
This recipe makes a generous amount of date caramel, so I recommend saving the rest for my Apple Pie Avocado Toasts or my Raw Vegan Twix Bars.
You can also use it as the topper to any dessert, yogurt bowl, or oatmeal.
For this recipe, I like to spoon the caramel into a piping bag (or ziplock bag with a corner cut out) and squeeze the mixture all over the apple chips in a zigzag fashion.
Toppings for Apple Chips Nachos
Now that you’ve got a plate of apple chips drenched in date caramel, let’s top it with some favorites.
I chose:
- slivered almonds
- dried cranberries
- dairy-free chocolate chips
Some other ideas are:
- chopped peanuts
- shredded coconut
- granola
You can customize the toppings to fit your mood.
If you’re feeling more like a dessert, try chocolate chips or cacao nibs.
For more of a solid snack, try dried fruit and nuts. Or go crazy and throw it all on, like me!
How to Serve Apple Chip Nachos
These Apple Chip Nachos with Date Caramel is the perfect fall snack!
All you need is a blender and a plate to bring this snack together with only 5 ingredients.
I think it would be a great after school snack for kids or a grown up nacho plate for adults like yours truly.
Customize the toppings to make the plate a healthy snack or sweet dessert.
This recipe makes one giant plate, so try cutting the recipe in half to serve less or make a plate to share with your people.
While the date caramel keeps for up to one week, the apple chips will get soggy after sitting for an extended period of time, so I recommend eating ’em immediately!

Ingredients
Apple Chip Nachos
- 1 bag Bare Snacks Apple Chips
- 1/2 cup slivered almonds
- 1/3 cup dried cranberries
- 1/4 cup dairy-free chocolate chips
Date Caramel
- 1 cup Medjool dates, pitted
- 1 cup warm water + more as needed
- 1 tsp maple syrup
Instructions
- Make the date caramel in advance. If your dates are dry, soak them in hot water for 10 minutes before adding to the recipe. Add the dates, warm water, and maple syrup to a high speed blender and process until perfectly smooth and creamy, adding more water as needed for thinner caramel. I like my caramel slightly thick and not quite pourable. If your caramel gets too thin, add in another date or two to thicken. Refrigerate the caramel until you’re ready to serve it.
- To make your apple chip nachos, add the apple chips to a plate and top with a generous amount of date caramel. Top with slivered almonds, dried cranberries, and dark chocolate chips. Serve immediately.
- Store any leftover date caramel in an airtight container in the refrigerator for up to one week.
