Well, it means I’m making leaps and bounds behind the scenes.
Preparing for a cookbook launch, making my new house a home with M, and doing personal and professional work to undo old habits and mindsets and shift to new ones.
I feel a lot like a caterpillar at the moment, curled up in cocoon awaiting a miraculous metamorphosis.
You know what else undergoes a metamorphosis that is effortlessly natural?
Tempeh, in this new recipe I have to share with you today.
This Apple Maple Tempeh Marinade is ready in just 30 minutes for a quick and easy plant-based protein option that you can mix and match in meals!
What You Need to Make Apple Maple Tempeh Marinade
Tempeh is such an excellent source of plant-based protein, and so easy to marinade for more depth of flavor!
Here’s what you need to make this tempeh marinade:
- avocado oil
- garlic powder
- Dijon mustard
- pure maple syrup
- Eden Foods Apple Butter
- lemon juice
- Tamari Lite
- tempeh
That’s it!
The star of this marinade is Eden Foods Apple Butter.
It adds a delightful hint of sweet and tangy apple to the mix!
This apple butter is my absolute favorite because it’s entirely fat-free and sodium-free without any refined sugars.
And it’s not just for marinading.
Try serving it on oatmeal, toast, pancakes, waffles, or baked into baked goods!
How to Make It
This marinade is so easy to mix up without much preparation.
Mix the avocado oil, garlic powder, mustard, maple syrup, apple butter, lemon juice, and Tamari together in a large bowl.
You can also mix them together directly in the baking dish, which is what I typically do.
Cut the tempeh into strips and add them to the bowl with the marinade.
Marinate the tempeh for at least 30 minutes.
I like to flip mine halfway through, if you’re around, but this is totally optional.
Oven-Bake or Pan-Fry
When your marinaded tempeh is almost done, preheat the oven to 425°F and line a baking sheet with parchment paper.
Transfer the marinated tempeh to the parchment lined baking sheet and pop it in the oven.
Bake it for 10 minutes, then flip the tempeh and bake it for an additional 10 minutes.
Remove the tempeh from the oven and serve it warm with optional sides!
Alternatively, you can also pan-fry your tempeh strips in a large skillet over medium heat.
Pan-fry your tempeh until it’s golden brown and sticky, which is about 5 minutes on each side.
How to Serve Your Apple Maple Tempeh Marinade
Enjoy this Apple Maple Tempeh Marinade any time you’re looking to mix up your protein.
It’s perfect served for a date-night in, a family dinner, and timid first time tempeh eaters.
The mild sweetness of the marinade does an excellent job of offsetting the natural bitterness of the tempeh.
Because it only requires a 30 minute marinade, it’s ideal for a quick workweek dinner or meal prep.
You can also marinade the tempeh in the morning and come home to perfectly marinaded tempeh after work in the evening.
I love my marinaded tempeh paired with roasted veggies, or a standard asparagus and potatoes.

Description

Ingredients
- ¼ cup avocado oil
- ½ tsp garlic powder
- 2 TBSP Dijon mustard
- 2 TBSP pure maple syrup
- 1 TBSP Eden Foods Apple Butter
- 2 TBSP lemon juice
- 2 TBSP Tamari Lite
- Two 8-oz. packages of tempeh
Instructions
- Mix the avocado oil, garlic powder, mustard, maple syrup, apple butter, lemon juice, and tamari together in a large bowl.
- Cut the tempeh into strips and add them to the bowl with the marinade.
- Marinate the tempeh for at least 30 minutes. Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Transfer the marinated tempeh to the parchment lined baking sheet and bake it for 10 minutes. Flip the tempeh and bake for another 10 minutes. Alternatively, you can add the marinade to a skillet over medium heat and pan-fry the tempeh until it’s golden brown; about 5 minutes on each side.
- Remove from the oven or skillet and serve with your favorite optional sides! Store leftover tempeh in an airtight container in the refrigerator for up to 5 days and reheat before serving.
