I’ve been a bit nostalgic this past week, friends, remembering simpler times and the family reunions every summer growing up.
On my family’s annual trip to Indiana to visit extended family, we always stopped at Cracker Barrel before returning to the endless highway.
So I have one question for you.
Have you tried Cracker Barrel fried apples?
No?
Well, it’s one of the best sides on the menu.
Every member of my family ordered a side of fried apples with our entrees regardless of whether we stopped for breakfast, lunch, or dinner.
These Apple Pecan Pie Oats with Sautéed Apples remind me of a much healthier spin off of that addictive southern comfort side.
And we could *all* use a little comfort food right now, right?
And, like at Cracker Barrel, at my house, you can “order” these apples to go all day long.
Any guesses as to why national apple pie day is in May?
I’m stumped, but I won’t complain.
Because apple pie is delicious no matter the season.
I was lucky to find some gorgeous granny smith apples at the store on my grocery run this week.
Guys, the grocery during a pandemic is weird right now.
But the thought of what I was going to do to these apples later definitely made me smile behind. the cotton mask looped around my ears.
I was smiling about Apple Pecan Pie Oats with Sautéed Apples, of course.
Apple Pie– for breakfast?
Yes, friend, yes!
Who needs to wait until after dinner for dessert when you can have it first thing in the morning?
This bowl is packed with complex carbs, fiber, protein, and naturally occurring sugars to fuel you with everything you need for the day.
What You Need to Make Apple Pecan Pie Oats
Here’s what you need to make pie for breakfast:
- coconut oil
- tart green apple
- pecans
- lemon juice
- maple syrup
- cinnamon
- gluten-free old-fashioned rolled oats
- unsweetened almond milk
- white chia seeds
- banana
- raisins
That’s it!
How to Make Apple Pecan Pie Oats
The base is a blueprint oatmeal recipe sweetened with banana and plump raisins.
I used half of a banana in my oats but you can use up to a full banana depending on how sweet you like your oatmeal!
The apple pecan pie compote is when things get pie-ified.
How to Make Sautéed Apples
Have you ever tried sautéing apples before?
It’s fast, easy, and instantly adds that apple pie taste to any breakfast, yogurt, or dessert.
I love using tart apples here for that authentic apple pie taste, but you can use any apple you have on hand.
Simply dice the apple and cook in a skillet with coconut oil, maple syrup, and cinnamon for a sinful clean topping.
The kitchen should smell like apple pie!
It’s fried apples without all of the oil and, well, frying.
To make these apple entirely oil-free, omit the oil and watch the apples closely to prevent burning on the pan.
Notes on Meal Prep
Add the pecans in to lightly toast and coat them with sticky maple syrup.
If you have enough pans and burners and feel able to multitask, you can sauté the apples while the oatmeal cooks on a separate burner.
You can also prep the apple pecan compote in advance and reheat as the topping to your oats all week long.
Add the cooked oatmeal to a bowl and top with the warm apple pecan pie compote.
The recipe below serves one, but you can easily double or triple the recipe to serve more!
I highly recommend doubling the compote so you can enjoy it on other things after the fact, like pancakes, toast, waffles, ice cream, or yogurt.

Enjoy these Apple Pecan Pie Oats as a cozy breakfast.
It’s quick enough to whip up after a morning workout and indulgent enough to enjoy on a lazy weekend morning.
This breakfast comes together in 10 minutes if you prep the apple compote at the same time as the oats OR in advance!
Try serving it with a drizzle of maple syrup to enhance the sweetness of the apples.
I love mine with a sprinkle of hemp hearts.

Description

Ingredients
Apple Pecan Compote
- 1 tsp coconut oil
- 1 tart green apple, cored and diced
- 2 TBSP pecans
- 1 tsp lemon juice
- 1–2 tsp maple syrup
- pinch of cinnamon
Apple Pie Oats
- 1 cup unsweetened almond milk + more as needed to reach desired consistency
- ½ cup gluten-free old-fashioned rolled oats
- 1/2 large banana or 1 small banana, mashed
- 1–2 TBSP raisins
- 2 tsp white chia seeds
- 1/4 tsp ground cinnamon
For serving
- Hemp hearts
- Apple pecan compote (recipe above)
Instructions
- First, prepare your apple pecan compote. Heat a pan over medium heat with coconut oil. When the coconut oil is melted, add the diced apple to the pan and drizzle with lemon juice, maple syrup, and cinnamon and mix to combine and coat. Sauté for 8-10 minutes, stirring often, until the apples are soft, fragrant, and tender. In the last 5 minutes, add in the pecans and stir until they’re coated and slightly toasted. Set aside.
- Warm a separate saucepan over medium heat and add the almond milk, oats, smashed banana, raisins, chia seeds, and cinnamon.
- Cook for ~10 minutes, stirring frequently, until milk is absorbed and the oats are light and fluffy. Add more almond milk as needed to reach desired consistency.
- To serve, add oatmeal to a bowl and top with the apple pecan compote. Serve with a sprinkle of hemp hearts and additional maple syrup for sweetness.

Hi. Beth! The bananas are mostly there to add sweetness. You can omit and use maple syrup, applesauce, date syrup, or coconut sugar instead!
