Description
Vegan and gluten-free banana bread made oil-free with strawberry apple sauce! Naturally sweetened with bananas and a hint of coconut sugar.
Ingredients
- 2 flax eggs (2 TBSP ground flaxseed + 6 TBSP filtered water)
- 3 medium to large bananas, smashed
- 1/4 cup unrefined coconut sugar
- 1/3 cup Eden Foods Organic Strawberry Apple Sauce (or your favorite Eden Foods plain apple sauce or flavored apple sauce!)
- 1/2 cups gluten-free old-fashioned rolled oats
- 1 cup gluten-free oat flour
- 1 cup almond flour
Instructions
- Preheat your oven to 350°F and line a bread pan with parchment paper, or alternatively, grease lightly with coconut oil.
- In a large bowl, combine the ground seed and water and allow to sit for 5 minutes to gel.
- Add the smashed banana to the flax mixture and mix to combine.
- Next, add in the apple sauce and coconut sugar and mix everything to combine.
- Finally, add in the oats, oat flour, and almond flour and stir well to combine.
- Pour the batter into the bread pan, smoothing out the surface with the back of a spatula. Top with optional banana slices, if desired, pressing them gently into the batter.
- Transfer the bread pan to the oven and bake it for 55-60 minutes, until the top is golden brown, and a toothpick comes out clean.
- Allow the bread to cool for 30 minutes before slicing and serving.
- Store the leftover banana bread in the refrigerator for up to one week and freeze for long term storage.
