Description

Vegan and gluten-free banana bread made oil-free with strawberry apple sauce! Naturally sweetened with bananas and a hint of coconut sugar.

  1. Preheat your oven to 350°F and line a bread pan with parchment paper, or alternatively, grease lightly with coconut oil.
  2. In a large bowl, combine the ground seed and water and allow to sit for 5 minutes to gel.
  3. Add the smashed banana to the flax mixture and mix to combine.
  4. Next, add in the apple sauce and coconut sugar and mix everything to combine.
  5. Finally, add in the oats, oat flour, and almond flour and stir well to combine.
  6. Pour the batter into the bread pan, smoothing out the surface with the back of a spatula. Top with optional banana slices, if desired, pressing them gently into the batter.
  7. Transfer the bread pan to the oven and bake it for 55-60 minutes, until the top is golden brown, and a toothpick comes out clean.
  8. Allow the bread to cool for 30 minutes before slicing and serving.
  9. Store the leftover banana bread in the refrigerator for up to one week and freeze for long term storage.
