Do you guys have a favorite juice shop near you?
For me, that place is Greenheart.
It’s the place I meet girlfriends and catch up and also where I get my favorite green juice.
It’s also where I taught my first (and only) in person yoga class this past summer, in a spacious green lawn staring out at friends and family.
It’s a good spot where good things happen there while drinking other good things.
Enough said.
Now that I live in Maryland, it’s one of Virginia’s major attractions that I plan to hit whenever I’m back in town.
And guys, Greenheart also has granola!
Today I’m sharing a recipe with a granola crust that’s delicious for an all-year round dessert.
This Avocado Key Lime Pie Bars with Granola Crust is vegan, gluten-free, and refined-sugar-free with just 7 ingredients.
Recipe Inspired by TFK
So, I know we’re talking about juice, but this recipe was inspired by a key lime pie from True Foods Kitchen.
When I dined there this summer with girlfriends, there was an Avocado Key Lime Pie on the menu that we were all too excited to order.
It was lime green, creamy, and perfectly tart, just like key lime pie should be!
This key lime pie was special, though, because it’s vegan, gluten-free, and made with avocados.
I knew after the first bite that I had to recreate it for my dessert rotation at home!
I first tested the recipe this past summer at a dinner party with my friends.
It was a hit, even though I served it mostly frozen and we had to take forkfuls like excavating a frozen treasure.
I tried to send the leftovers home with my friends but they politely refused.
So M and I enjoyed the leftovers in the week that followed, plating the squares and savoring bites while we watched Scrubs reruns.
What You Need to Make the Crust
So, how can you create your own Avocado Key Lime Pie?
Start with the crust.
Here’s what you need:
- Greenheart Juice Shop Nutty Granola
- coconut oil, melted
That’s it!
Greenheart Granola
First, line a bread pan with parchment paper and set it aside.
You’ll use this pan to fashion your key lime pie bars!

How to Make the Granola Crust
Add the granola to a blender along with the melted coconut oil and blend everything until the mixture turns into a fine crumble and sticks to itself and the sides of the blender.
Press the granola mixture into the pan in a thin firm layer with your hands or the back of a spoon.
If the mixture is tacky, I find it helpful to use a piece of parchment paper between the crust and my hands to evenly distribute it.
Finally, transfer the dish to the freezer to firm up while you create the key lime pie filling.
What You Need to Make Avocado Key Lime Pie Filling
Here’s what you need to make the creamiest Avocado Key Lime Pie filling:
- cashews
- coconut milk light
- avocado
- limes
- lime zest
- maple syrup
That’s it!
How to Make Avocado Key Lime Pie Filling
You didn’t think I’d make you clean the blender between steps, did you?
Rinse out the blender before making the filling.
To make the filling, add the soaked cashews, coconut milk, avocado, lime juice, and maple syrup to a high speed blender or food processor.
Blend the mixture until it’s smooth and creamy, scraping down the sides with a spatula to recombine things as needed.
It’ll take a few minutes.
Add another splash of coconut milk if you need to get the blades moving.
The mixture should be thick and almost pourable.
Freezing Avocado Key Lime Pie Bars
Remove the pan from the freezer and pour or spoon the blended key lime pie filling on top.
Spread the filling into an even layer with a spatula or the back of a spoon.
I like to tap it several times to remove any air bubbles.
Cover the dish and transfer it back to the freezer for another 3-4 hours to set.
If you’re planning to serve these bars in the evening, I recommend making the bars in the morning.
A safe bet it always to freeze them overnight!
Notes on Meal Prep
To serve the Avocado Key Lime Pie Bars, lift the parchment paper from the pan and slice them into small bars.
For the best consistency, leave the key lime pie bars out for 15-30 minutes before serving.
You want the filling to give a little when pressed with your finger.
If it’s rock solid, leave it out for an additional 10-15 minutes until it’s more of a meringue!

- 1 ¼ cups Greenheart Juice Shop Nutty Granola
- 2–3 TBSP cold-pressed coconut oil, melted
Filling
- 1 cup raw cashews, soaked 4-6 hours
- ¾ cup coconut milk light
- 1 large avocado or 2 small avocados
- 3–4 large limes, juiced
- Zest from 1 large lime
- ⅓ cup pure maple syrup
Instructions
