Description

Banana chia chocolate chip muffins made with oatmeal and chia seeds. Gluten-free, refined sugar-free, and packed with protein.


Ingredients

Wet Ingredients

  • 1 flax egg (1 tablespoon ground flaxseed + 3 TBSP water)
  • 3 medium ripe bananas, mashed
  • 1/4 cup pure maple syrup
  • 1/4 cup unsweetened almond milk
  • 1/4 cup plain applesauce

Dry Ingredients

  • 1 cup oat flour
  • 1 cup gluten-free old fashioned rolled oats
  • 1/4 cup unrefined coconut sugar
  • 1/4 cup white chia seeds
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 cup semisweet chocolate chips
  • Optional: stir in 1/2 cup chopped nuts

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with liners or spray with nonstick spray.
  2. In a small bowl, mix together ground flax and water and allow to sit for a few minutes to gel. Add the mashed bananas then mix in the rest of the wet ingredients.
  3. Sift in all dry ingredients to the same bowl except the chocolate chips. Mix until well combined, then fold in the chocolate chips.
  4. Fill each muffin cup about 3/4 of the way full and sprinkle the top with more chocolate chips, chia seeds, and oats (optional).
  5. Bake the muffins for 20-25 minutes, or until a toothpick comes out clean.
  6. Allow the muffins to cool for 10 minutes, then remove them from the pan.
  7. Store leftover muffins in an airtight container in the refrigerator for up to a week and freeze for long term storage.
