Every morning before jumping into work I make a list of my top three priorities for the day.
These “impact tasks”, we’ll call them, are the things that I know move life forward even if absolutely *nothing* else gets done.
I am what I’ve heard referred to as a time optimist, which sounds like a positive thing but is actually kind of a curse.
I *always* think I can do more in 24 hours than is actually humanly possible.
So, lately I’ve been working on lowering my expectations for myself.
And choosing impact tasks that are meaningful but not necessarily ground-breaking and grueling.
Sometimes something as simple as calling a friend back or finding time for a 60 minute yoga class drastically shifts my perspective and trajectory of the day.
Or meal prepping a delicious baked oatmeal for the week!
This Berry Baked Oatmeal is sure to meet all of your breakfast expectations.
And, yes, you should probably add it to your top three impact tasks of the day.
It’s made in less than an hour for a naturally sweet breakfast that’s popping with berries, oatmeal, and nuts, for a nutritious start to your day.
Baked Oatmeal is Perfect for Meal Prep
You might have gathered by now that I’m a “list” person.
And making baked oatmeal has been on this said list for a while now.
Disclaimer: I love my fall apples and pumpkin and squash as much as the next girl.
But have you tried warm berries this time of year???
They’re my forever favorite fruit topping for warm breakfasts all year round.
You’re going to love them baked into this easy oatmeal that vegan, gluten-free, grain-free, and naturally sweetened!
It’s packed with plant-based protein, fiber, complex carbs, and healthy fats so you have energy to check off all of your TO-DOs for the day.
What You Need to Make Berry Baked Oatmeal
Here’s what you need:
- pecans or walnuts
- gluten-free old-fashioned oats
- ground cinnamon
- Himalayan sea salt
- unsweetened almond milk
- pure maple syrup
- ground flaxseed
- almond butter
- mixed berries (blueberries, raspberries, and blackberries)
That’s it!
How to Make Berry Baked Oatmeal
First, get that oven going.
Preheat the oven and line a baking dish with parchment paper.
While the oven is pre-heating, start mixing up your baked oatmeal.
First, combine the oats, nuts, cinnamon, and sea salt in a large mixing bowl and toss to combine.
In a smaller mixing bowl, mix up your flax egg and let is sit for 5 minutes to gel.
Add the almond milk, maple syrup, and almond butter to the same bowl and stir well to combine.
Add the wet ingredients to the dry and mix, mix, mix until the oats and nuts are totally saturated.
Hey, you’re almost done!
About the Berries
Now let’s get berrylicious.
For this Berry Baked Oatmeal I used a blend of blueberries and strawberries, but any berry goes!
I love the taste of blackberries and raspberries here as well.
Fold in the mixed berries and gently mix so that all of the berries are well coated.
Pour the berry oat mixture into the baking dish and spread into an even layer.
I recommend topping the baked oatmeal with even more mixed berries; just so this berry baked oatmeal lives up to its name, you know?
Transfer the dish to the oven and bake for ~45-ish minutes, until the top is nice and golden brown and the berries are bubbling.
Remove the baked oatmeal from the oven and allow it to cool for a few minutes to set up.
How to Top Berry Baked Oatmeal
Now let’s top our Berry Baked Oatmeal with some serious crunch before serving.
I topped my dish with Bob’s Red Mill Maple Sea Salt Pan-Baked Granola.
This granola is so addicting, guys!
It has big chunks of gluten-free granola that’s non-GMO and refined sugar free.
The maple sea salt flavor is made with whole grain oats, real maple syrup, coconut, and seeds baked to crunchy perfection.
Go ahead, enjoy some by the handful while you distribute it on your oatmeal for topping.
The granola may absorb moisture and soften over time, so I recommend adding it only to the portion you’re serving.

Ingredients
- ⅔ cup roughly chopped pecans or walnuts
- 2 cups gluten-free old-fashioned oats
- 1/4 tsp ground cinnamon
- Pinch of Himalayan sea salt
- 1 ¾ cups unsweetened almond milk
- ¼ cup pure maple syrup
- 2 flax eggs (2 TBSP ground flaxseed + 6 TBSP filtered water)
- ¼ cup almond butter
- 1 ½ cups berry blend– blueberries, raspberries, and blackberries
- Bob’s Red Mill Maple Sea Salt Pan-Baked Granola
Instructions
- Preheat the oven to 375°F and line a 9×9 square baking dish with parchment paper or lightly grease with coconut oil.
- In a medium mixing bowl, combine the oats, nuts, cinnamon, and sea salt.
- In a smaller mixing bowl, mix up the flax egg and allow to sit for 5 minutes to gel. Next, add in the almond milk, maple syrup, and almond butter and stir well to combine.
- Add the wet ingredients to the dry and mix well.
- Fold in the mixed berries.
- Spoon the mixture into the baking dish and spread into an even layer. Top with more mixed berries.
- Bake for ~45 minutes, until the top is nice and golden brown. Remove the baked oatmeal from the oven and allow it to cool for a few minutes.
- Serve with Maple Sea Salt Pan-Baked Granola on top for extra crunch.
- Store leftovers in the fridge for up to one week and reheat before serving.
