I’m in one of those phases where I feel overwhelmed by thoughts and ideas and inspiration and wanting to do it all, NOW.
But, as my chia pudding taught me this week, good things come in layers.
I’m excited to share my all-time favorite chia pudding recipe with you today.
It’s perfect for dressing up or down, requiring only three ingredients plus some seriously fun superfood toppings.

Do you like chia pudding?
Chia seeds are packed with fiber as well as vitamins and minerals, so eat up!
To be honest, I wasn’t always a fan.
The first time I soaked chia seeds in almond milk overnight I was a little dubious about their texture the next day.
I jabbed the mixture with my spoon a few times before spooning it into my mouth and deciding it was edible.
That was before I discovered the art of layering.
Chia pudding can be a bit “meh” on its own, you know?
Throw in some texturized toppings, however, and it becomes simply irresistible.
For me, it was about the texture– was I supposed to chew on these little bloated seeds or just kind of let them slide down like jello?
I wanted something to chew on.
In these parfaits, I used slivered almonds. cacao nibs, fresh berries, and Sejoyia Coco-Roons!
I love the mix of textures here so you get a bit of crunch and flavor variation with every bite.
What’s that cookie-colored fluffy layer up top?
Not granola!
I crumbled up Vanilla Maple Coco-Roons to make a sweet layer in these pudding parfait cups.
You’ll love this flavor made with cashew, coconut, and a touch of maple syrup.
Crumbling them on things adds a wonderful coco-nutty cookie flavor dispersed with each bite.
If you don’t have Coco-Roons on hand are making the recipe, sub your favorite granola instead.

They’re perfect to layer up in advance for grab and go breakfasts, snacks, or a healthy dessert.
I like to make a batch of chia pudding on Sunday night and use it in parfaits during the week.
Don’t be afraid to get creative with your layers!
Some other ideas are granola, hemp hearts, goji berries, and shredded coconut.

Description

Ingredients
Basic Chia Pudding
- 1/4 cup white chia seeds
- 1 cup unsweetened almond milk
- 1 TBSP maple syrup
Berry Pudding Parfait
- 1/2 cup fresh berries, muddled
- ~1/2 cup chia pudding recipe, above
- 2 crumbled Vanilla Maple Coco-Roons
- 1 TBSP slivered almonds
- 1 TBSP cacao nibs
- 1/4 cup fresh berries
- 1/2 kiwi, sliced
Instructions
- Add the almond milk and maple syrup to a large bowl, then stir in the chia seeds with a fork.
- Allow the mixture to sit for 5-10 minutes, then whisk it again, cover, and place in the refrigerator for 4 hours or overnight.
- To make the berry pudding parfaits, muddle fresh berries at the bottom of a jar. Top them with the prepared chia pudding, Coco-Roon crumbles, slivered almonds, cacao nibs, fresh berries, and kiwi in layers. Serve immediately.
- Store leftover chia pudding in the refrigerator for up to one week.
