This breakfast was born out of unapologetically busy mornings without a whole lot going on in the fridge.

I was committed to an early Saturday morning yoga class. the one you idealize on Friday evening and greet sluggishly Saturday by pressing the snooze button a handful of times before finally extricating yourself from bed just in time.

With minutes to spare, I needed something quick, quicker that a protein shake quick, so I grabbed a container of yogurt, added a spoonful of protein powder, a big handful of granola, and lots of berries, and ran out the door.

After the first hurried bite I knew that I had a new recipe blueprint on my hands.

Hello, Berry Yogurt Protein Parfaits.

The first versions of this combination were far from photogenic— an indiscernible cup of mush white with the occasional spotting of a granola cluster or smashed berry.

I refined things here so you can choose to dine and dash or make a prettier parfait version in advance.

Either way, this is an easy grab and go breakfast or snack that will save you when pressed for time!

Berry Yogurt Protein Parfaits by Flora & Vino

Let’s talk about the two main main, yogurts and granola.

Lately I’ve been loving the combination of two of my favorites, KitchFix Granola  and Lovve Lavva Yogurt.

KitchFix granola is gluten-free, grain-free, and lower in sugar while being naturally sweetened and refined sugar free with some serious crunch.

Lovve Lavva yogurt is a creamy mix of Pili nuts, prebiotic-rich plantains, silky coconut, and cassava with vegan probiotic cultures and 100% real fruit without any added sugar, gums, or preservatives!

My favorite grain and gluten-free granola over a cup of no sugar added plant based yogurt.

You can mix and match flavors, but I love the vanilla and berry based yogurt cups and the original, vanilla berry, and chocolate granola here.

Stop right there and you have a pretty sweet brekkie, but let’s take it a step forward, shall we?

For mix-ins, I went with fresh berries (can also use frozen), chia seeds, and slivered almonds.

While the yogurt and granola pack a good amount of protein by themselves, I wanted even more staying power to hold me over until my next meal.

Try stirring in a tablespoon of your favorite plant-based protein powder to amp up the protein content of the yogurt, then top with a sprinkling of nuts and seeds for a little extra.

Just trust me on the protein powder in yogurt. You mix it into smoothies, so why not into your yogurt bowl?

It melts into the consistency and gives it a nice thicker Greek-yogurt like consistency that is satiating and spoonable!

Chia seeds and almonds are just what I had on hand– you can use virtually any nut, seed, cacao nibs, or dried fruit.

My current favorite combination is the original Lovve Lavva with vanilla protein powder, mixed berries, and lots of KitchFix vanilla berry granola.

The key to the best make ahead parfaits is to keep the yogurt as a base layer with the fruit and toppings as a dividing layer and granola on top.

This prevents the granola from getting soggy and preserves the integrity of the yogurt flavor.

Description

Blueprint yogurt bowl that’s perfect for busy mornings and meal prep. Stir in optional plant-based protein powder for a boost and top with your favorites.


Ingredients

  • 1 5.3 oz container Lovve Lavva Yogurt(Vanilla, Raspberry, Blueberry, Strawberry)
  • 1 TBSP slivered almonds
  • 1/2 TBSP chia seeds (optional)
  • 1/2 cup mixed berries
  • 1 TBSP vanilla plant-based protein powder (optional)
  • generous 1/4 cup KitchFix Granola (Original, Vanilla Berry, Chocolate)

Instructions

  1. Add the yogurt and protein powder (if using) to a small mason jar or bowl and whisk until well combined.
  2. Layer in the chia seeds, slivered almonds, berries, and granola of choice.
  3. Serve immediately or store for 2-3 days in the fridge.

I started teaching yoga again this spring. In the I started teaching yoga again this spring. In the midst of cookbook edits and stunning spring weather, I felt called to unfurl my Manduka mat and talk my friends and family through a feel-good flow.

At first, I felt rusty; stumbling through cues and postures. What’s that pose, again? What’s that body part? I forgot options; I forgot pacing, I forgot to balance active poses with rejuvenating rest.

But I’m starting to get it back. The confidence that comes with repetition. The joy that comes from seeing a student let go, watching tangible tension melt away; I’m an audience to mindfulness.

I wanted to become a yoga teacher because it felt like the single greatest gift I could give to another human being. Maybe that’s because it’s one of the greatest gift that I give to myself.

As I get back into teaching, I’m reminded that crafting yoga classes is a beautiful, delicate artform. One that I’m excited and eager to get better at.

I teach vinyasa yoga—A creative flow. I’m currently working on theming my classes—conveying a subtle suggested message through movement, music, and words.

Last Friday I taught my book club and I spent hours working on the soundtrack and the sequence. I shifted around openings and contractions, counted things in threes, and shuffled songs in a clear crescendo towards peak posture, softening into savasana.

It reminded me of the English classes I took in high school. We tirelessly underlined paperback books, searching for themes, motifs, and expressive language with a pink highlighter and red ballpoint pen.

Writing a yoga sequence is kind of like that, but in reverse. This time I’m the author, the creator, the conductor, sprinkling in symbols and allusion and foreshadowing to guide towards the truest version of you.

I strive to talk through the poses with expressive language and concise cues. Watching for reactions, feeling what the collective is feeling, working with them to achieve a union of mind, body, and spirit.
