This weekend I went on my first hike of 2022 with friends!
It’s been *beautiful* fools Spring weather, the kind of seductive sunshine that makes you want to pack up your winter clothes before the calendar reads March.
So, on Saturday the five of us took advantage of the warmth and completed the Strickler Knob Trail in the Shenandoah Area.
This 11-mile there and back trail was the longest toughest hike I’ve done in a while, complete with rock scrambles and a steep butt-kicking ascent at the end.
But the 360-degree views at the summit overlooking Luray, Virginia made it all worth it.
I don’t think I realized how much I was craving an outdoor adventure until I was on the path, breathing in fresh air and relaxing into the pattern of my footsteps.
I’m so grateful I have a group of good people to explore with.
And a space on the Internet to explore plant-based eats with.
For the past few weeks I haven’t been able to get enough of citrus and beets.
Today, let’s combine them together in these Blood Orange Beet Blueberry Shakes that are sweet, simple, and slurp-able.
What You Need to Make a Blood Orange Beet Blueberry Shake
Here’s what you need:
- unsweetened almond milk
- vanilla protein powder
- ground flaxseed
- frozen blueberries
- blood orange (or any orange)
- pre-cooked and frozen beet
That’s it!
About the Beets
While you can totally peel, cook, and freeze your beets, I love freezing pre-cooked Love Beets for convenience.
All you have to do is open the packaging and pop them in the freezer!
The beets will keep in the freezer for several months and can be added to shakes and smoothie bowls.
I used blood orange in this recipe, but any color of orange will work.
If you’ve got a plain navel orange, throw it in instead!
How to Make Blood Orange Beet Blueberry Shakes
Add all of the ingredients to a high-speed blender and blend everything until it’s smooth and creamy.
There is a bit of a method to the way that you pack your blender, here.
I recommend adding the almond milk first, followed by the protein powder and ground flaxseed, and ending with the frozen blueberries, frozen beet, and peeled and segmented blood orange.
This ensures that the protein powder and ground flaxseed won’t flip everywhere during the blending process and will be contained under the heavier fruit and veg!
I like to tear open each of my orange segments to check for orange seeds before blending, too.
Although there isn’t much almond milk, the shake should blend up easily because the orange will start to release its juices while processing!
You want the shake to be super creamy and thick, but drinkable.
Swaps and Substitutions
If the shake is too thick for your liking, add a splash of almond milk to thin it out a bit.
If it’s too thin, add a handful of frozen blueberries to thicken it up!
Once you’ve nailed the consistency, pour the blender contents into a glass and serve immediately.
If you know me, you know I *always* serve my shakes thick with toppings.
The beauty of a thick shake is that the toppings will “float” on top, instead of sinking!
For this shake I love adding fresh blueberries and granola.

For variations, try subbing in strawberries, raspberries, or blackberries for the blueberries.

Ingredients
- ½ cup unsweetened almond milk
- 1 scoop vanilla protein powder (I used Tone It Up!)
- 1 TBSP ground flaxseed
- 1/2 cup frozen blueberries
- 1 blood orange, peeled and torn into segments (any seeds removed!)
- 1 small pre-cooked beet, peeled and frozen
Instructions
- Add all ingredients to a high speed blender and blend until smooth and creamy.
- Pour into a glass and serve immediately!
