I was beyond excited when I started seeing the dark rind of blood oranges appear in the citrus barrels at the grocery store. I love the addition of blood orange to my meals for both flavor and coloring, so why not add it to dessert, too?

Make Vegan Cookies with Chickpeas
Chickpea cookies are my absolute favorite easy dessert hack.
I love my Spiced Cashew Chickpea Snookies so much that I crafted them into a chocolate chip cookie.
But why stop at chocolate chip when you can throw in a little Vitamin C in the form of fresh squeezed citrus?
These Blood Orange Chocolate Chickpea Cookies require just six ingredients and come together in less than 30 minutes.
They’re perfect to whip up when you’re craving something satisfying sweet but healthy.
What You Need to Make Blood Orange Chocolate Chip Chickpea Cookies
Here’s what you need to make these cookies:
- chickpeas
- SunButter or nut butter
- cinnamon
- baking powder
- maple syrup
- fresh squeezed blood orange juice
- dairy free chocolate chips or chopped chocolate bar
- orange zest
That’s it!
How to Make Blood Orange Chocolate Chip Chickpea Cookies
These cookies are so easy to make in one bowl!
First, preheat oven to 350°F and line a cookie sheet with parchment paper.
Add all of the ingredients except the chocolate chips to a blender and pulse everything until this mixture is well combined.
I like to pause and scrape down the excess on the sides with a rubber spatula to recombine everything.
The cookie dough should resemble a sticky dough.
Stir the chocolate chips right into the blender to avoid dirtying extra dishes!
Next, scoop the dough into balls with a cookie scoop and place them on parchment paper.
The batter should make about 16 cookies.
Bake the cookies for 20-25 minutes, or until they’re golden brown on the bottom and firm to the touch.
Swaps and Substitutions
These cookies are totally customizable to whatever you have on hand in your kitchen.
If you don’t have Sunbutter, any nut butter will work as a substitute.
Can’t find blood oranges?
Use any citrus instead!
If you prefer to use a chocolate bar instead of chocolate chips, chop up your favorite and mix it in in.
For extra citrus zing, add in a teaspoon of orange zest. I think stirring in 1/4 c. of walnuts or your favorite nut would be fantastic here, too.
How to Serve Blood Orange Chocolate Chip Chickpea Cookies
Cool the cookies slightly before serving and refrigerate any leftover cookies in the refrigerator for up to a week.

Description
Chocolate chip cookies made with chickpeas and naturally sweetened with maple syrup and blood orange. Perfect for a healthy snack or dessert!
Ingredients
- 1 15 oz. can chickpeas, drained and rinsed
- ½ cup SunButter or nut butter
- ¼ tsp cinnamon
- 1 tsp baking powder (makes them rise more but you can omit!)
- 3–4 TBSP pure maple syrup (I used 3– add more for sweeter cookies)
- 2 TBSP fresh squeezed blood orange juice (or sub regular orange juice)
- 1/4 cup dairy free chocolate chips or chopped chocolate bar (refined sugar free, if possible)
- 1 tsp orange zest
Instructions
- Preheat oven to 350°F and line a cookie sheet with parchment paper.
- Add all ingredient except the chocolate chips to a blender and pulse until well combined, pausing and scraping down the excess on the sides with a rubber spatula to ensure even consistency. It should resemble sticky dough. Stir the chocolate chips right into the blender to avoid dirtying extra dishes.
- Scoop dough into ~1.5 Tablespoon balls and place on parchment paper. The batter should make about 16 cookies.
- Bake for 20-25 minutes, until golden brown on the bottom and firm to the touch.
- Cool slightly before serving and refrigerate leftovers in the fridge for up to a week. Freeze for longterm storage.
