Description
3-ingredient homemade cashew butter made with freeze-dried blueberries and raw nuts. Serve with Bare Snacks Banana Chips for an easy snack!
Ingredients
- 2 ½ cups raw cashews
- ½ cup raw walnuts
- ¾ cups freeze-dried blueberries (1 1.2 oz bag)
- Bare Snacks Simply Banana Chips, for serving
Instructions
- Add the raw cashews and walnuts to a high speed blender or food processor (I used a Vitamix!) and process until smooth and creamy. Scrape down the sides as needed with a spatula to recombine and use a toggle (if you have one) to move the nuts around the blade. The nuts should go from a crumble to a flour to a rough spread to a smooth butter in 3 to 4 minutes. Stop the blender every 30-60 seconds to ensure it doesn’t overheat.
- Once the cashews and walnuts are smooth and creamy, add in the freeze-dried blueberries and process until they’re well-combined with the nut butter. This will take about another minute or so.
- Taste the mixture for texture and consistency and process for an additional minute for smoother nut butter or leave as is for more texture.
- Serve it immediately with Bare Snacks Simply Banana Chips!
- Transfer the nut butter to an airtight container and store in the refrigerator for 2-3 weeks.
