If you haven’t woken up to the smell of pancake batter bubbling on the stovetop, I highly recommend you try it.
There really is no better way to start off your weekend.
Blueberry pancakes are my favorite because they remind me of weekends at home when my parents made them on Saturday mornings.
Don’t tell my other pancake recipes that, though.
I carry on the weekly blueberry pancake tradition in my house by making protein pancakes at least once a week.
My signature pancakes are bursting with fruit and packed with protein.
These Blueberry Hemp Heart Protein Pancakes are my favorite version of the classic, combining fresh blueberries and raw hemp hearts for a nutritious start.
Have you tried hemp hearts yet, friends?
They’re rich in protein and amino acids.
I love sprinkling them on salads, smoothie bowls, and they make awesome dressing to (check out my Creamy Hemp Heart Ranch recipe!).
And now, in pancakes.
Fresh berries and nutty hemp hearts were meant to smushed together and doused with syrup.
The idea to combine blueberry and hemp came from one of my favorite granola flavors by Purely Elizabeth, Blueberry Hemp Ancient Grains.
(Hands down my favorite granola–check them out if you haven’t!)
I’m happy to announce that the combination works just as well in pancake form as it does in the ‘nola.
If you’ve dabbled in plant-based baking or cooking, chances are you’ve mixed up a “flax egg” before.
If you haven’t, the rule is 3 to 1, water to ground flax seed.
Mix it up and watch it “gel”.
I owe a lot of successful baked recipes to the trusty flax egg.
Sometimes I tire of adding flax seed to everything, though, you know?
I decided to ditch the “flax egg” on this stack and try a new substitution.
These Blueberry Hemp Heart Protein Pancakes call for use of a “hemp heart egg” instead.
The “heart hemp egg” function the same way the flax seed version does, with all of the same “stick to” power that holds your pretty pancakes together!
No blueberry left behind.
Enjoy these Blueberry Hemp Heart Protein Pancakes as a lazy weekend breakfast or as an energizing post-workout meal.
Try any other berry instead of blueberries for different variations!
If you don’t have protein powder, try substituting a gluten free flour of choice for varied results.
Double or triple the recipe and freeze leftovers for quick pancake breakfasts for later.

Blueberry Hemp Heart Protein Pancakes

Description
Gluten and grain-free pancakes made with protein powder and hemp hearts, lightly sweetened with banana, and bursting with blueberries.
Ingredients
- Avocado oil spray
- 1 hemp heart “egg” (1 TBSP hemp hearts + 3 TBSP filtered water)
- ½ banana (or sub 1/3 cup pumpkin)
- 1 TBSP unsweetened almond milk
- 1 scoop protein powder (I used Vanilla Tone It Up)
- Fresh blueberries
For serving
- blueberries
- hemp hearts
- maple syrup
Instructions
- Warm a skillet over medium heat with a little bit of avocado oil.
- In a blender or food processor, combine 1 TBSP raw hemp hearts + 3 TBSP water and let sit for a few minutes to create your hemp heart “egg”.
- Next, add banana, almond milk, and protein powder and blend until well combined. Alternatively, you can mix by hand by whisking with a fork.
- Spoon mixture onto the skillet and spread with a spatula so it forms a large thin circle or several smaller circles.
- Heat for 5 minutes, or until golden brown underneath, then flip and heat for 3-5 on the other side.
- Transfer pancake to a plate and top with more blueberries, hemp hearts, and maple syrup.
