It’s starting to feel like home here in Maryland!
Last weekend we hung photos and I arranged my plants in nice little nooks around the living room.
I tried out a local yoga studio and a new trendy coffee shop and roastery.
We explored several grocery options and perused the aisles thinking, hey, this could be my new spot.
Naturally, we’ve scouted out all of the nearby takeout options.
But don’t let the takeout bags fool you, plenty of food has been made, here, too, friends!
I even had my first *real* dinner party last weekend, hosting two of my friends for a plant-based pizza party in.
And on Sundays, I meal prep for the week ahead in a kitchen that still feels oddly unfamiliar and new.
My new favorite snack to have and to hold are these Blueberry Muffin Energy Balls!
They’re made with just 8 ingredients and one bowl for a quick compact snacking solution.
Ah, it’s hard to beat a good blueberry muffin, isn’t it?
I remember the mini blueberry muffin packs my mom would occasionally buy for us as kids.
I’d tear one open and have the sticky little pastries gone in under a minute.
The little pre-packaged packs never quite seem big enough, or blueberry-y enough to satisfy me.
Luckily, I have a snacking solution in never-ending supply with these Blueberry Muffin Energy Balls.
You can make them in under 10 minutes for a quick snack that is portable and delicious!
And you can put as many blueberries as you want in these muffins, boo.
What You Need to Make Blueberry Muffin Energy Balls
Here’s what you need to make Blueberry Muffin Energy Balls:
- raw almond flour
- gluten-free old-fashioned rolled oats
- pure maple syrup
- Eden Foods Organic Dried Blueberries Snack Packet
- chia seeds
- hemp hearts
- lemon
- SunButter, cashew butter, or almond butter
That’s it!
How to Make Blueberry Muffin Energy Balls
The base to these balls is a hearty mix of almond flour and gluten-free old-fashioned rolled oats.
Throw in some chia seeds and hemp hearts for texture and seed-y protein.
I used sunflower seed butter to keep things oil-free and super creamy with a bit of nutty flavor.
You can use virtually any (nonsweetened) nut or seed butter you like for different flavor variations!
The balls are naturally sweetened with pure maple syrup.
If you don’t have maple syrup on hand, you can use another liquid sweetener of choice, like date paste or honey.
A squeeze of lemon adds a bit of acidity and tartness to really help that freshly baked pastry vibe come through.

The Best Dried Blueberries
What would a blueberry muffin be without blueberries?

The method to creating these balls is foolproof; you literally throw everything into a bowl and that’s it!
You might never bake *actual* blueberry muffins again, that’s how easy it is.
Add all of the ingredients to a large mixing bowl and stir everything until it’s well combined.
The resulting mixture should be sticky but not wet.
Add a bit more nut butter if the mixture is too dry and more almond flour or oats if the mixture is too wet.
You’ll know when the mixture is just right because it’ll form a giant solid ball in the bowl.
Notes on Meal Prep
Now that the batter is mixed, let’s scoop it up!
Use a cookie scoop to collect the dough and then roll it into balls with your hands.
Place the balls on a parchment lined plate or baking sheet.
You can enjoy them immediately, but I recommend transferring them to the refrigerator for ~30 minutes to chill.
The cold refrigerator encourages the balls to firm up a bit, making them easier to eat and enjoy!
Grab a few straight from the fridge and keep the leftover balls in the refrigerator for up to two weeks.

Instructions
- Add all ingredients to a large mixing bowl and stir until well combined. The mixture should be sticky but not wet. Add more nut butter if the mixture is too dry and more almond flour or oats if the mixture is too wet.
