Blueberry Muffin Energy Balls

Blueberry muffin energy balls made with oats, almond flour, nut butter, seeds, and dried blueberries.  Perfect to meal prep for the week!


  • ¾ cup raw almond flour 
  • ¾ cup gluten-free old-fashioned rolled oats
  • ¼ cup pure maple syrup
  • 1 Eden Foods Organic Dried Blueberries Snack Packet
  • 1 TBSP chia seeds
  • 1 TBSP hemp hearts
  • ½ lemon, squeezed 
  • Heaping ½ cup SunButter, cashew butter, or almond butter


  1. Add all ingredients to a large mixing bowl and stir until well combined. The mixture should be sticky but not wet. Add more nut butter if the mixture is too dry and more almond flour or oats if the mixture is too wet. 
  2. Scoop the batter with a cookie scoop and roll into balls with your hands. Place the balls on a parchment lined plate or baking sheet. 
  3. Transfer the balls to the refrigerator for 30 minutes to firm up.
  4. Enjoy immediately!
  5. Store leftover balls in the refrigerator for up to two weeks.
