Well hello, lovelies, and welcome to August.

I started off the month with an early bird Solid Core class (5:30 AM!!!) and a big bowl of oats that taste like pie.

OK, I make it sound seamless, but the truth is that there was a lot of snooze button-slapping and matcha-slurping that propelled me here.

Wanna join?

OK, if you can’t make it to class, I get it, but you should at least join me for breakfast.

This Blueberry Pie Oatmeal (No-Added-Sugar!) is my current favorite way to eat oats.

It’s completely fruit-sweetened and packed with protein, fiber, and a 2-ingredient blueberry pie compote.

Blueberry Pie Oatmeal Ingredients

We start with my basic model for some good tasting stovetop oats.

This is my go-to blueprint for any stovetop oat recipe, so save it and make your own versions!

All you need is:

  • gluten-free old fashioned rolled oats
  • unsweetened almond milk
  • chia seeds
  • smashed banana

Almond milk in place of water adds creaminess, chia seeds add bulk, and smashed banana adds that perfect hint of sweetness.

If you want you could mix in your favorite protein powder for an extra boost.

You could also add in your favorite veggie, like grated zucchini or riced cauliflower, but both this is totally optional.

Bob's Red Mill Granola

Did you know you could basically make blueberry pie filling on the stovetop in under 10 minutes?

All you need are:

  • frozen blueberries
  • fresh squeezed citrus– lemon or orange juice

I like to use orange juice here because it adds a little extra sweetness.

You could add a bit of maple syrup here for extra sweetness, if you want, but I love leaving it no sugar added.

The blueberries will bubble and thicken until you have a sweet plump purple compote that’s pie without the crust.

This compote isn’t just good for oatmeal– you can also use it to top chia pudding, pancakes, waffles, toast, or smoothie bowls!

I mean, who *really* needs pie crust?

What are your favorite oatmeal toppings?

My bowls are usually topped with fresh fruit and some kind of crunch.

The crunch conduit in this instance is Bob’s Red Mill new Lemon Blueberry Pan-Baked Granola that I tried for the first time this week.

Yes, Bob’s Red Mill makes granola now!

The new Lemon Blueberry Pan-Baked Granola is a combination of whole grain oats, real maple syrup, coconut, blueberries and wholesome seeds baked to crispy, golden perfection.

I figured it would be the perfect topper to my blueberry pie oats, and I wasn’t wrong.

Stovetop oats

I usually prepare my oatmeal and blueberry compote in separate pans on the stovetop at the same time.

You’ll want to stir both frequently to ensure they don’t burn, so don’t go too far!

Usually I use the time to unload the dishwasher while the smell of warm blueberries fills the kitchen.

It’s a place you WANT to be, friends.

More often than not, they’ll be done at about the exact same time– at the 10 minute mark.

Not bad for breakfast on a time budget, yeah?

Try making these Blueberry Pie Oatmeal (No-Added-Sugar!) for an easy elevated breakfast cereal!

I like mine served warm to reinforce the warm pie vibe, but you could also throw these ingredients together in a jar to make Blueberry Pie Overnight Oats, too.

To do this, reduce the almond milk by 1/2 and mix together all the oatmeal ingredients in a mason jar.

In the morning, add more almond milk as needed and top with prepared blueberry compote and desired toppings.

This recipe serves one, as I’m oatmeal-ing for one over here, but you can easily double, triple, or quadruple the recipe to feed more mouths.

Description

Simple stovetop oats naturally sweetened with banana. Topped with an easy sugar-free blueberry pie compote. Perfect for workweek breakfast!


Ingredients

Blueberry Pie Compote

  • 1 cup frozen blueberries
  • 1–2 tablespoons fresh squeezed orange juice

Stovetop Oatmeal

  • 1/2 cup gluten-free old fashioned rolled oats
  • 1 cup unsweetened almond milk
  • 2 tsp chia seeds
  • 1/2 banana, smashed

For Serving

  • Bob’s Red Mill Lemon Blueberry Pan-Baked Granola 
  • Fresh blueberries

Instructions

  1. To make the blueberry pie compote, add the frozen blueberries and orange juice to another saucepan over high heat. Bring to a boil and allow to cook for 5-8 minutes or until the mixture is thick and sticky. Set aside.
  2. At the same time, add the oatmeal and unsweetened almond milk to a large saucepan and heat pan on medium until bubbling. Add in smashed banana and chia seeds and reduce the heat to medium-low. Cook 8-10 minutes, or until oatmeal has absorbed all almond milk.
  3. To assemble, add the oatmeal to a bowl and top with blueberry pie compote, fresh blueberries, and granola. Enjoy immediately!

Notes

To make overnight oats, add all oatmeal ingredients with HALF the almond milk to a mason jar. Refrigerate overnight. In the morning, top with blueberry compote, fresh blueberries, and desired toppings.

    This is delicious and kept me full for a long time. The blueberries on top are enough sweetness that you don’t even notice there’s no added sugar. I loved it!

    I have wanted to make this oatmeal for a long time, and I am going to make it this weekend! However, I I was looking through the recipe and noticed I don’t have any bananas right now. Could I use maple syrup or honey in place, and how much would I add?

      Hi Cloey!

      I’ve never tried this myself, but it should work. I would add about 1/2 – 1 TBSP of maple syrup or honey to sweeten this recipe, depending on your taste. Let me konw how it goes!
