Last weekend M and I went beachfront camping with two of our friends and their baby on the Nanticoke River in Maryland.
Of all the camping trips we’ve done together, I think this one was the hardest.
So, camping is always innately hard, right?
For me, that’s part of the charm of it.
It strips down your life, making all of those small mundane tasks you do without thinking more difficult, forcing you into the present by problem-solving.
Need to do the dishes? You have to walk 5 minutes to the closest water station, lugging dirty pots and pans and detergent with you.
Want to make coffee? You have to light the camp cooktop and boil some water in the camping kettle.
Fancy a shower? Well, you may or may not be in luck, depending on how back country you are.
Usually, by infusing my life with a little discomfort, it reminds me of the little joys in life.
So I was prepared to do without and be on the water and in the summer sun, but I wasn’t prepared for the extreme heat, the thunderstorms, and the exposed campsite (without any shade!)
We made it through one sweaty, sleepless night, narrowly dodging some severe weather.
I swear I didn’t sleep at all, tossing and turning in my toasty sleeping bag, opening an eye every thirty minutes to check for the first signs of daylight; nature’s way of signaling an appropriate time to emerge from my tent.
When the weather threatened for more storms the next evening with even higher temps, we did what any nature-loving experienced campers would do.
We bailed.
Honestly, if it wasn’t for the tarp our friends brought to create some man-made shade and these Blueberry Protein Overnight Oats for breakfast, we might have bailed even sooner.

What You Need to Make Blueberry Protein Overnight Oats
Whether you’re camping this summer or not, it’s really nice to have a chilled breakfast prepared so you can be ready for long summer days.
I made these overnight oats easily the night before camping so they were easy to transport in the cooler!
Here’s what you need to make Blueberry Protein Overnight Oats unsweetened almond milk
- unsweetened almond milk yogurt
- frozen blueberries (use frozen over fresh!)
- lemon juice
- maple syrup
- vanilla protein powder
- Bob’s Red Mill Gluten-Free Organic Old-Fashioned Rolled Oats
- chia seeds
That’s it!
How to Make Blueberry Protein Overnight Oats
The first step to making these Blueberry Protein Overnight Oats is to create your own “blueberry milk”.
It’s basically a blueberry smoothie that we then add oatmeal to!
Add the almond milk, almond milk yogurt, frozen blueberries, lemon juice, maple syrup, and protein powder to a high-speed blender or food-processor and blend until smooth and creamy.
This will create a bright blue creamy consistency for pouring over your oats like you would milk!
I recommend using frozen blueberries over fresh for this recipe, because the frozen blueberries yield and way blue-er color.
Which is kind of the appeal of these ONOs, right?
The Best Gluten-Free Organic Oats
Divide the oats, chia seeds, and vanilla protein powder between two mason jars.
I used Bob’s Red Mill Gluten-Free Organic Old-Fashioned Rolled Oats to create these overnight oats.
These are my *favorite* oats to use for anything oatmeal related.

Notes on Meal Prep
Divide the blueberry “milk” between the two oatmeal mason jars.
Lightly mix the jars with a spoon to ensure that all of the oats are coated in the blue liquid and refrigerate them overnight.
In the morning, taste the overnight oats and add more maple syrup for sweetness, if you want.
Serve the overnight oats with fresh blueberries and a spoonful of your favorite granola.
I like to add a spoonful of nut butter too, for a more decadent taste and creamy texture.
How to Serve Blueberry Protein Overnight Oats
Enjoy these Blueberry Protein Overnight Oats as a fresh breakfast any time of year.
Blueberries are my favorite berry so I loved infusing them in this oatmeal.
You can also try this recipe using blackberries or raspberries for a fun “berry-ation!”
They’re super portable, so make them and stash them in the fridge, or throw them in a cooler and take them on your summer getaway.
Store the overnight oats in the refrigerator for up to one week.

Ingredients
Blueberry Protein Overnight Oats
- 2/3 cup unsweetened almond milk
- ⅓ cup unsweetened almond milk yogurt
- 1 cup frozen blueberries
- 1 TBSP fresh squeezed lemon juice (1/2 lemon, squeezed)
- 1 TBSP pure maple syrup
- 1 TBSP vanilla protein powder
- 2/3 cup Bob’s Red Mill Gluten-Free Organic Old-Fashioned Rolled Oats
- 4 tsp chia seeds
For serving
- fresh blueberries
- a few spoonfuls granola
- nut butter
Instructions
- Add the almond milk, almond milk yogurt, frozen blueberries, lemon juice, maple syrup, and protein powder to a high-speed blender or food-processor and blend until smooth and creamy.
- Divide the oats and chia seeds between two mason jars. Divide the blueberry mixture liquid between the two mason jars.
- Lightly mix the jars with a spoon and refrigerate them overnight.
- In the morning, taste the overnight oats and add more maple syrup for sweetness, if you want.
- Serve the overnight oats with fresh blueberries and a spoonful of your favorite granola.
- Store the overnight oats in the refrigerator for up to one week.
