Description

Blueberry Stovetop Oatmeal made brilliantly blue in 15 minutes. Top it off with your favorite nuts, dried fruit, and seeds.


Ingredients

  • ½ cup gluten-free old fashioned rolled oats 
  • 1 cup filtered water
  • ½ cup frozen wild blueberries
  • 1 tsp pure maple syrup (optional)

Toppings

  • 1 TBSP mixed nuts (slivered almonds, chopped pecans, chopped walnuts)
  • 1 TBSP dried fruit (raisins, dried cranberries, dried cherries)
  • 1 TBSP granola
  • 1 tsp unsweetened shredded coconut 

Instructions

  1. Add the oats, unsweetened almond milk, and frozen blueberries to a small saucepan over medium-high heat. Bring the mixture to a low boil, then reduce the heat to a simmer and cook the oats for 10-15 minutes. Stir the mixture frequently to prevent it from sticking to the bottom of the pan. Add a splash of almond milk or filtered water if the mixture gets too dry. In the last few minutes, stir in optional maple syrup. 
  2. Serve the oats warm in a bowl and top with mixed nuts, dried fruit, granola, and shredded coconut.
  3. Enjoy warm!
