We’re getting ready to travel across the country this week, and I’m feverishly compiling a list of portable snacks to take with me.
Sometimes I get a bit annoyed at yours truly for being so high maintenance when it comes to my lifestyle and traveling.
Dan asked inquisitively why I pack snacks when we could just buy them when we land.
But friends.
They don’t sell Cacao Chickpea Cookie Dough where I’m going.
Cookie Dough on the Go
I think this Cacao Chickpea Cookie Dough could totally survive a plane flight, don’t you?
Well, unless it’s all gone before we land.
You’re going to love this stuff straight out of the blender.
It’s thick and chunky, lightly sweetened with maple syrup, and packed with cacao crunch.
Go ahead, indulge in more spoonfuls than you intended because…you need your chickpea protein!
Sejoyia Coco-Roons
Have you guys tried Coco-Roons before?
They were the first ready-made cookie that I found after switching to being plant-based.
I definitely started hoarding all of the flavors whenever their brightly colored packaging caught my eye at the store.
The ingredients are clean and simple; made with a mix of cashew, coconut, and maple syrup.

This time, instead of creating cookies and baking them, we simply blend it up and store it in the fridge for a simple high protein snack.
It’s that easy.
I used creamy peanut butter in my cookie dough “batter”, but any nut butter will work here.
Cashew butter or almond butter would be delicious too!
Add Your Own Mix-Ins
If you don’t have cacao nibs, dark chocolate chips (70% cacao or higher) are a good substitute.
You can also add your own mix-ins to create your own cookie dough flavors.
Go savory with crushed pretzels, chopped nuts, or seeds.
To go sweet, add dried fruit, shredded coconut, or chocolate.
How to Serve Cacao Chickpea Cookie Dough “Snackwiches”
Enjoy this Cacao Chickpea Cookie Dough whenever you’re craving something sweet but want to stay sensible.
It’s a fun way to snack to switch things up from your usual apples + PB and raw bars, you know?
I love to have a few spoonfuls for a mid-morning or afternoon snack when I’m wishing for dessert but know I’ll feel better with something nutrient dense.
If you can’t find Coco-Thins near you, sub your favorite snack cookie instead.

Description
Cacao chickpea cookie dough “Snackwiches” made with chickpeas, nut butter, and your favorite cookies. Perfect for a snack or dessert.
Ingredients
- 1 15 oz. can of chickpeas, drained and rinsed
- ½ cup creamy peanut butter or cashew butter
- 2–3 TBSP maple syrup
- 1 TBSP ground flaxseed
- dash of cinnamon
- 1/4 cup cacao nibs
- 1 package Sejoyia Coco-Thins
Instructions
- Add all of the ingredient except the cacao nibs to a large blender or food processor. Blend until smooth and cream, scraping down the sides as needed to recombine.
- Fold in the cacao nibs to the blender with a spatula.
- Refrigerate the mixture overnight to allow cookie dough to harden, or serve immediately.
- With a cookie scoop, scoop ~1 – 2 TBSP of “cookie-dough” between Coco-Thins or your favorite snack cookie and enjoy!
- Store any leftover Cacao Chickpea Cookie Dough in an airtight container in the refrigerator for up to one week. Freeze for longterm storage.
