It’s that time of year where it’s easy to feel a little lost, yeah? 

It’s cold.

It’s dark. 

The holidays are over and the expanse of the year ahead can feel heavy and hard. 

The worst part is, despite the cold and gloom, we haven’t had any significant snowfall here in Maryland!

So, I’ve been prioritizing quality time with friends, getting outside every day, and staying active to beat the winter blues. 

Another activity in my “winter survival toolbox” is cozying up at home and making a fancy dinner. 

Usually I make dinner here at F&V, because I’m typically brimming with ideas for recipe testing or serving up leftovers from a shoot. 

But, whenever M does get involved in the kitchen, I remember how much fun it is to have a cooking partner! 

We love our weekly takeout but some of my favorite dinners are the ones that we make and enjoy together.

It feels like M and I have been away more than we’ve been home for the month of October. 

I’m currently writing to you from Lexington, Kentucky, where we are visiting M’s family! 

We’ve already seen a horse race and completed a tour at a local distillery. 

From Kentucky we’re driving on to Indiana to see my family for our annual family reunion.

So, this trip in total will be a lot of driving, a lot of family, and, so far, a lot of fun!

I’m honestly not a road tripper, and being in the car usually makes me a bit nauseous and a lot antsy, restless, and moody. 

Something about being trapped in a tiny space hurdling down highways makes me feel all kinds of existential and pensive. 

However, it has its perks, like being able to pack whatever I want: i.e. a bag dedicated only to shoes and two coolers packed with meal prepped food.

It’s surprisingly warm in Kentucky, so I’m currently loving my classic chilled overnight oats and wraps. 

However, it’s the time of year where I start craving warm cozy things all day long. 

I’ve always been a firm believer in the warm salad, because when it gets cold raw salads just sound less appealing. 

Today I’m sharing my favorite 5 Warm Salads to Make this season!

Friends, I can’t believe that I’m running my first marathon THIS WEEKEND. 

Me. 26.2 miles. Chicago. Let’s go. 

As I tend to do with big milestones, I find myself subconsciously dividing my life into two eras: pre-marathon and post-marathon. 

Mostly, it’s a lot me saying in response to any given task, “I’ll get to it after the marathon”. 

But that’s because my brain is full of the race map, carb-loading, running gear, and, oh, you know, SURVIVING it. 

The longest I ran on my training plan was 20 miles, which felt challenging but doable. 

They say that the last 6 miles is all *mental*; a comforting belief that I’m clinging to. 

At least I won’t be running it alone! 

My friend in Chicago will be joining me for the race.

And M will be there, too, meeting me at checkpoints so I can throw layers at him and chug electrolytes and dried fruit. 

In the midst of planning and prepping for a long weekend in the windy city, it occurred to me that I don’t have a proper Halloween recipe round up on F&V.

So, instead of stressing about whether I will or will not return a marathoner (I will, I will!), I put together a fun mix of Halloween recipes for you.

It’s soup season, friends! 

I’m doing the Minimalist Challenge for the month of September so the usual piles of “stuff” are growing on the main level. 

Is it weird that I *love* de-cluttering? 

Setting aside the daily time to assess how much, I, (we) need is calming, grounding, and fulfilling. 

When I ran out of items to part with on the first two floors I recruited M to venture to the attic.

I was happy we found the slow cooker in amongst the boxes labeled “KITCHEN OVERFLOW” in big bold Sharpie letters. 

So these past few weekends I prepped a big pot of soup packed with vegetables left over from the weekly recipe rotation. 

It makes for the coziest Sunday evening meal and I love reheating bowls for lunch throughout the week.

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

M and I have plans to visit True Food Kitchen this M and I have plans to visit True Food Kitchen this week for V-Day and it reminded me of this Harissa Toasted Cauliflower I made inspired by their menu item. Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
