I’m writing this post with the sniffles and a tickly throat…all of the telltale symptoms that a cold is coming for me.

Doh.

Sometimes I like being sick. Is that a weird thing to say?

OK, maybe I could do without the physical symptoms, but being a highly active person, sometimes I forget to slow down.

Being sick quite literally forces me to take some time to rejuvenate both my body and my mind.

Lounging on the couch eating nicecream while binge-watching This Is Us (who else is obsessed???) sounds pretty great right about now, but we’re about to road trip to Indiana to visit my extended family and there’s a lot to get done around here.

Mostly in the form of food preparation because when I travel, I tend to take my kitchen with me.

These Curried Cranberry Apple Chickpea Salad Cups are on my list of easy things to prepare for the trip.

It’s been hot hot in Virginia and I want to talk salad.

I’ve never really understood the whole side salad thing.

Have you?

When I order them in restaurants I always end up mixing it with the main course to make an eclectic but scrumptious mess.

Salad might be the last thing on your mind this weekend, but then you haven’t tried this BBQ Chickpea Salad with Creamy Hemp Heart Ranch yet.

Because if you had you wouldn’t be able to get over these flavors.

You’re going to love the mix of smoky sweet warm chickpeas with fresh raw chopped veg, all tied together with a creamy hemp heart ranch.

Did I ever tell you about that time I went strawberry picking?

I showed up at the farm with my sunhat and gardening gloves, ready for the romance of picking beautiful red fruit from the ground while seated daintily in the shade.

Well, let me tell you, strawberry picking is not that picturesque.

I stood hunched over under the beating sun, squinting through the shrubbery for flashes of red berry, sweat collecting in the rim of my sunhat, my basket of berries only a quarter full.

Every berry into the bucket was a success, and every berry chucked onto the ground…was probably overripe and buggy.

But friends, the good ones were SO GOOD.

It’s strawberry season again and I know just what to do with them.

Something like…toasted quinoa tossed with sweet strawberries, peppery radishes, crunchy snap peas, tender peas, and fresh herbs, tied together with a bright lime tahini dressing.

These days I mostly purchase my strawberries from the store, but that doesn’t mean I’m not willing to work for my berries.

This Strawberry Herb Quinoa Salad, however, hardly requires much work at all; just 1-bowl and less than 30 minutes.

That way you can spend more time outside, enjoying the warmer weather, or, picking more berries.

In our old neighborhood, there was a killer kabobs place.

The small restaurant, part of a strip mall, was conveniently located right next to my gym.

I remember ducking out of class long enough to breathlessly place my order, running back in to finish off the last ten minutes of kickboxing with images of kabobs dancing in my head.

The place had this magical green sauce that I now recognize as tzatziki sauce, but at the time just thought of as magic green sauce.

I didn’t know what was in it, but I knew that dipping pita in it was a really good idea.

These Greek Power Bowls with Cucumber Yogurt Tzatziki Sauce remind me of that little gem. 

Classic greek veggies paired with hearty quinoa and kale, fresh herbs, toasted pine nuts, decadent herbed nut cheese, and a cucumber yogurt tzatziki sauce.

This isn’t Your Big Fat Greek Wedding’s average salad.

My number one tip for keeping bowls and basic meals interesting and fresh is to create a couple staple sauces that you can mix and match.

I hope this Cucumber Yogurt Tzatziki Sauce becomes one of yours.

When I first delved into finer dining on dates and amongst friends, I got nervous ordering off of the food menu.

I always ordered a Caesar salad in those instances because it’s easy to pronounce and tasty to eat.

You know exactly what you’re going to get with a Caesar.

Plentiful salad green smothered in creamy white dressing with buttery croutons and flecks of parmesan.

My ordering anxiety is gone now, which is good, because this Kale Caesar Salad with Avocado Dressing isn’t as easy to say, but it’s easier to fall head over heels for.

I recreated this comforting classic in a salad that is plant based and healthy with just a few substitutions.

Okay, maybe everything is a substitution, but when you taste it you’ll agree you wouldn’t have it any other way.

It manages to still have that refreshing creamy “Caesar” feel without any of the dairy, oil, and gluten.

Plus, you get the added benefits of healthy fats and protein where your typical Caesar can sometimes be lacking.

Last night I deleted the TO DO list that I’ve compiled on my phone since 2011.

By accident.

Yeah, that happened.

I was messing around inside the Reminders app, swiping up and down and mentally grunting and groaning at some of the tasks that have literally been on there for…years.

And…instead of deleting a line item I realized with giddy gratification I’d accomplished, I went and deleted the whole darn list.

Oops.

My first feeling was panic, sheer ‘how am I going to survive and function as a real adult without my to do list’ panic, but before I could even verbalize the terror it quickly changed to something I recognized as relief. Relief!

What?!

I could probably call Apple to try to retrieve the list from cyberspace.

I’m sure all of my “organize the closet” and “call grandma” and “go to target ” are swimming out there in the web somewhere with someone else’s dirty laundry.

Luckily, this Roasted Beet Macro Bowl wasn’t on the list.
