Cherry chia pudding with protein that’s lightly sweetened with maple syrup. Top with fresh cherries, apple chips, and hemp hearts!
Hi, dear friends, and happy 2021.
Since we last spoke, we collectively said goodbye to the longest, hardest, weirdest year yet.
After I cheers-ed away 2020 with champagne and lots of cookies, I woke up on January first feeling a little forlorn.
Yeah, I was in a bit of a post-holiday funk, as is typical for me after New Years Eve.
I cried a little, almost bought a bunch of plants, decided against it (where to put them???), then watched a lot of feel good TV reruns.
Things started to shift after I hopped onto an impromptu video call with girlfriends to talk meal prep and workout goals for the coming week.
Making plans and getting back into a routine always does wonders for my morale.
It made my heart swell to see us all in our Brady brunch Zoom boxes, hurrying around our virtual spaces, cleaning, shopping, and doing respective Sunday tasks.
It’s those kinds of interactions that make this weird world feel normal and worth it.
So, maybe our 2020 feelings didn’t magically disappear come 2021.
But we can still plan for an amazing year, where literally anything is possible.
Get back into our back-to-work groove with this Cherry Chia Pudding that’s easy to mix up in advance for a sweet snack!
Because I’m cheering (cherrying?) you on this year.
Why You Should Meal Prep Chia Pudding
So yesterday I meal prepped like it was 2021 to ensure that this first workweek of January is breezy.
Because we’ve got enough to think about without trying to worry about food.
I washed and chopped all of the veggies and fruits and make quinoa and baked tofu and even prepared some tahini dressing.
Oh, and I made chia pudding.
This Cherry Chia pudding is thick, sweet, and filling!
It’s perfect for a light breakfast or snack.
What You Need to Make Cherry Chia Pudding
Here’s what you need to make Cherry Chia Pudding:
- unsweetened almond milk
- fresh or frozen cherries
- chia seeds
- hemp hearts
- vanilla protein powder
- pure maple syrup
That’s it!
As cherries aren’t in season right now, I used frozen cherries for this recipe, but fresh work too if you have them!
Feel free to omit the protein powder if you want, but I like adding it for a boost of protein.
The Best Toppings for Cherry Chia Pudding
For the toppings:
- almond milk yogurt
- hemp hearts
- Bare Snacks apple chips, crushed
- fresh or frozen cherries, pitted and halved
Or add your favorites!
How to Make Cherry Chia Pudding
Making Cherry Chia couldn’t be easier!
Add all of the ingredients to a high speed blender or food processor and blend until the mixture is smooth and creamy.
Divide the mixture between mason jars, then cover and refrigerate for 4+ hours, or overnight.
After chilling, serve your chia pudding with your favorite garnishes.
For toppings, I love a spoonful of almond milk yogurt, hemp hearts, fresh cherries, and crushed Bare Snacks apple chips.
I love these baked apple chips that stay crispy and crunchy even when floating on cherry chia pudding
Store leftovers in the refrigerator for 2-3 days!
How to Serve Cherry Chia Pudding
This Cherry Chia Pudding is ideal for mixing up the night before you need a quick snack!
It’s great as as light snack or breakfast.
Try making the full serving in a big bowl then portioning into smaller glass jars or storage containers for easy grab-and-go single serving cups.
Feel free to mix up the toppings, too!
I think slivered almonds, fresh fruit, or shaved dark chocolate would be great on top, too.
If you’d like to make more servings, double the recipe and divide between more mason jars.
Leftovers keep well in the fridge for 2-3 days.
Enjoy!
