Today I had a coffee date with a girlfriend that I haven’t seen in over a year.
We parked our cars outside of the Starbucks drive-through and socially distanced sipped on coffee, bridging the gap between our cars with conversation.
Guys, I had forgotten how nice it is to be in the company of another woman and catch up on life as we know it.
I came home with an empty coffee cup and a full heart, ready to take on a photo shoot and blog post writing.
Lately I’ve been all about mixing up my routine; making small changes to embrace an awakening world.
I’m currently enrolled in not one but TWO 7-day free trial via workout apps.
Which kind of goes hand in hand with the 6 AM alarm that startled me into waking up after the third snooze this morning.
I feel like I’ve been in a deep sleep or meditation for the past year and I’m just starting to regain consciousness.
Like, Rip Van Winkle level sleepiness.
An in-person game night with my cousins and sister is planned for two weeks out; the first date we’re all fully vaccinated.
We joked that no games would be played– the entire night will probably revolve around hugging.
So much hugging. And food!
What better way to embrace summer celebrations, in person and afar, then with a fresh dip?
This Cherry Tomato Salsa is made with just six ingredients and served with my favorite grain-free crackers!
You need:
- cherry tomatoes, quartered
- white onion, diced
- juice from lime, squeezed
- garlic powder
- cilantro, de-stemmed
- Himalayan sea salt
- Hu Kitchen Sea Salt Grain-Free Crackers, for serving
That’s it!
This recipe is ridiculously easy to make with fresh produce and a blender.
The hardest part is just quartering the cherry tomatoes; those guys tend to slip away from you if you’re not careful!
Add all of the ingredients to a high-speed blender or food processor and pulse until everything to blend it up.
You want the blender contents to be well-combined but not soup-y!
Pulse the mixture more for thinner salsa and less for chunkier salsa.
Scrape down the sides of the blender as needed to recombine and larger chunks.
Once you have a consistency that looks good to you, taste the salsa and add more Himalayan sea salt if you want.
I didn’t need any more in mine!
This Cherry Tomato Salsa is the perfect companion for dipping!
It would be perfect to blend up for game-night, Taco Tuesday, or part of your anytime meal-prep for the week.
I love serving the salsa fresh with Hu Kitchen Sea Salt Grain-Free Crackers.
These crackers are the best; they’re light and crispy without any oils, fillers, or binders.
Refrigerate the mixture for 30-60 minutes before you serve it to allow the flavors to meld.
Store the leftover salsa in an airtight container in the refrigerator for up to 7 days.
It’s also excellent served in tacos, burritos, bowls, and salads!

- 3 cups cherry tomatoes, quartered
- ½ white onion, diced
