Chocolate Avocado Chia Pudding with ripe avocado, raw cacao, and naturally sweetened with maple syrup. Perfect to prep for a quick snack!
The most exciting news that I have to share is that we *finally* got some furniture for the deck!
One of my goals for this year is to really be able to enjoy our patio space.
I say this every year and then every year it kind of becomes an afterthought of unswept leaves and gardening relics.
But not this year!
I’m envisioning our new patio table and chairs, some herbs and flowers, and of course, lots of plants.
It really is starting to feel like spring here in Maryland, so the spring cleaning itch has set in…hard.
The last two weekends I attended baby showers for two special women, both about to welcome little baby boys into the world this spring.
I can’t wait to meet them and feel so honored already to be a part of their “village”.
While I mother my plants and try not to unearth the house with my spring cleaning, let’s prepare ourselves a sweet snack.
This Chocolate Avocado Chia Pudding is the perfect chilled treat to welcome spring.
It’s make super creamy with avocados and thick with chia seeds.
It tastes like dessert but is packed with plant-based protein, fiber, and healthy fats!
What You Need to Make Chocolate Avocado Chia Pudding
So this pudding is kind of a cross between a basic chia pudding and a basic avocado pudding.
If you’ve never had either, you’re in for a treat!
This pudding boasts the best of both worlds, with some insane texture and taste to prove it.
Here’s what you need to make Chocolate Avocado Chia Pudding:
- avocados (Super-ripe ones are always good!)
- lemon
- pure maple syrup
- raw cacao powder
- unsweetened almond milk
- chia seeds
That’s it!
How to Make Chocolate Avocado Chia Pudding
You can make this pudding in less than 10 minutes!
Add all ingredients except for chia seeds and optional toppings, to a high-speed blender or food processor.
Blend the mixture until it’s smooth and creamy, scraping down the sides as needed to recombine.
The mixture should get really thick and fluffy, so you may need to stir several times to get the correct consistency.
The chocolate-avocado mixture is done when it’s totally smooth, rich, and chocolate-y.
No let’s add some chia to this pudding party!
Once it’s super creamy, transfer the chocolate-avocado mixture to a bowl and stir in the chia seeds.
I like to do an initial stir, then wait 5-10 minutes and stir again.
This ensures that the chia seeds are well mixed and none of them stick to the bottom as the mixture starts to thicken!
Cover the bowl and refrigerate for at least 4 hours (or overnight) to let the chia seeds thicken and the pudding chill.
Notes on Meal Prep
After the two hours wait are up the pudding is ready to serve!
It should be thick, smooth, and irresistibly chocolate-y after chilling in the fridge.
You can divide the pudding into separate mason jars for a pre-portioned snack or just portion it on the go.
I like to pre-portion mine in advance into separate glass jars or containers so I can easily grab them during busy work days.
Toppings for Chocolate Avocado Chia Pudding
Serve this Chocolate Chia Avocado Pudding chilled straight from the refrigerator with your favorite toppings!
Some of my favorite topping ideas are:
- fresh berries
- cacao nibs
- shredded coconut
- chopped nuts
- granola
- chocolate chips
Anything goes here, so get creative!
If you pre-portion your pudding in advance, I recommend adding the toppings *just* be serving so they remain fresh.
How to Serve Chocolate Avocado Chia Pudding
Enjoy this Chocolate Avocado Chia Pudding as a quick and satisfyingly sweet snack for the week.
We all know that guacamole starts to brown and look, well, less than appealing after a day or two in the fridge.
So you might assume this avocado-based pudding would do the same…but it doesn’t!
The addition of lemon preserves the avocado from spoiling, and it helps that the pudding is already chocolate brown.
You can store this leftover pudding in the refrigerator for up to 5 days and it will not only taste, but look great, too!
I usually make the full four servings for meal prep and enjoy pudding throughout the work week.
Try grabbing one for a protein-packed snack, breakfast, or dessert.
The combination of healthy fats and fiber in a creamy dessert format will keep you energized for hours!
Enjoy!
