Cookie Confessions P1: I’ve never used muesli in any of the conventional muesli ways.
Nope, I’ve never enjoyed it soaked, on the stovetop, or in yogurt.
But I do use it in regularly in cookies, so I can work my way backwards from creative to generic, yeah?
I’m so excited to share these Chocolate Chunk Muesli Snack Cookies with you!
Well, maybe not these cookies specifically, (that might break my heart) but the recipe is up for the taking!
You’re going to love their hearty texture, short ingredient list, and gooey dark chocolate chunks.

Why You Should Add Muesli to Cookies
If you haven’t tried muesli before, it’s a great mix of rolled oats, grains, dried fruits, seeds, and nuts.
Kind of like oatmeal elevated, making it the perfect hearty base for a healthy cookie!
If you like to stay gluten-free like I do, make sure you check the label on the back of your muesli to ensure it’s gluten free before using.
I decided to call these cookies “snack cookies” because that’s how I typically enjoy them.
They’re the kind of cookie you can grab in twos and threes and munch on throughout the day.
What You Need to Make Chocolate Chunk Muesli Snack Cookies
Here’s what you need:
- ground flaxseed
- maple syrup
- nut or seed butter
- gluten-free muesli
- almond meal
- cinnamon
- dried cherries
- Hu Kitchen Simple Dark Chocolate

These hearty cookies have all of my favorite things going on in them.
Hearty muesli, fluffy almond flour, and creamy almond butter lightly sweetened with maple syrup and dried fruit.
They’re packed with protein, fiber, fruit, whole grains, and flavor.
Oh, and did I forget to mention, chocolate chunks?
How to Make Chocolate Chunk Muesli Snack Cookies
First, preheat the oven to 350°F and line a large baking sheet with parchment paper.
In a large bowl, mix together flax egg, maple syrup, and nut butter and mix until it’s smooth.
Mix in the muesli, almond meal, and cinnamon and stir well to combine.
Fold in the optional dried cherries and chocolate bar chunks.
Roll the dough into ~2 TBSP balls, then flatten them with your hands into 16 cookie discs.
Add the additional chocolate chunks on top, if desired.
Bake the cookies for 12-15 minutes or until they’re lightly browned underneath.
The Best Chocolate for Snacking
The first thing I do when I buy chocolate is take a long hard look at the ingredients.
I like mine to be refined sugar free, oil free, and at least 70% cacao.
Hu Kitchen Chocolate ingredients are only fair-trade cacao, unrefined organic coconut sugar, organic fair-trade cocoa butter.
BAM. That’s it!
I used their Simple Dark Chocolate bar to make these cookies, but any of their delicious bars will work!

How to Serve Chocolate Chunk Muesli Snack Cookies
Cool the cookies slightly before eating (they firm up a lot!) and store them in an air tight container in the refrigerator for up to one week.
Grab a pan and enjoy these Chocolate Chunk Muesli Cookies whenever, wherever!
I love to prepare a batch for the week and have a couple chilled for breakfasts or snacks.
For a more a decadent treat, try warming them up with a glass of milk, ice-cream, or yogurt.
Nom.
Because of their hearty solid shape, they store and pack well for snacking on the go.

- 1 3/4 cup gluten-free muesli
- 1/2 cup almond meal
- 1/4 tsp cinnamon
- 1/4 cup dried cherries or dried fruit (optional)
- 1 bar Hu Kitchen Simple Dark Chocolate, roughly chopped (~1/3 cup chopped, plus more for topping)
