When I was in high school I thought I was way too cool for Valentine’s Day.
“Valentine’s Day is a holiday invented by greeting card companies to make people feel like crap,” I used to tell myself, to quote Eternal Sunshine of the Spotless Mind (one of my favorite movies of all time– have you seen it?)
I told myself I could be cool like Clementine.
I didn’t need anyone to shower me with roses and candy and sweet nothings.
My friends and I wore black while everyone else wore pink and I pretended not to feel pangs when the roses delivered in class by “cupid” weren’t for me.
I’ll never forget my first Valentine’s Day with a boyfriend, though.
I opened up my locker and inside were flowers and Build-A-Bear (did you ever build one??) propped up on top of my books and binders.
Friends, I could not stop smiling.
I paraded that bear around all day from class to class like a proud puppeteer.
Now, I thought, this whole Valentine’s Day thing isn’t so bad.
And guys– it’s even better today when there are vegan, gluten free, and refined sugar free treats involved to share and love and share with those you love.
If Valentine’s Day was indeed invented by Hallmark card companies…
I can deal so long as these Chocolate Coconut Covered Strawberries are a part of the package deal.
They require only three ingredients that you can whip up easily in under 30 minutes to share with your boo or take to the bubble bath because…
Self love.
Valentine’s Day came early here at F&V…
Dan came home while I was photographing this bunch and requested that I save him some.
He’s a sucker for this simple clean dessert and I was happy to oblige– after he helped me with the process shots, of course.
To be honest I’ve never really loved the whole chocolate covered <insert fruit here>.
If fruit is nature’s candy, do we really need to go and cover it in cocoa?
Well, yes, actually, sometimes, we do.
Especially when that fruit is strawberries and the chocolate is dark and the coconut chips are crispy.
While I didn’t invent the classic chocolate covered strawberries, what I did perhaps invent is rolling said chocolate covered berries in Bare Snacks Chocolate Coconut Chips.
I love these three ingredient coconut chips infused with cocoa and lightly sweetened with coconut nectar.
Try rolling your freshly dipped berries in the crushed chips for an extra bit of chocolatey coconut crunch with each bite.
YUM.

Description
Easy vegan chocolate covered strawberries with a crunchy chocolate coconut exterior. Perfect for a healthy Valentine’s Day treat!
Ingredients
- 1 pint strawberries, rinsed and patted dry
- 8 oz vegan dark chocolate (70% or higher), melted
- 1 bag Bare Snacks Chocolate Coconut Chips
Instructions
- Prepare a baking sheet with parchment or wax paper and set aside.
- Rinse the strawberries under running water and pat them dry with a towel. It’s important you have very dry strawberries before continuing to the next step.
- Add the dark chocolate to a saucepan over medium low. Warm until the chocolate is fully melted, stirring often.
- While the chocolate is melting on the stovetop, add the chocolate coconut chips to a high speed blender or food processor and pulse until you have smaller pieces– not too fine– some texture is OK and desired here. Alternatively, you can crush with your hands to achieve a similar result. Transfer the crushed chocolate coconut chips to a large plate and set beside the prepared baking sheet.
- Transfer the melted chocolate to a small bowl with enough depth to dip strawberries and set it next to the crushed chocolate coconut chips.
- One by one, dip the strawberries into the melted chocolate, swirling slightly to ensure they’re well coated. Allow any excess to drip off, then move strawberry to the coconut chip plate and carefully roll them in the crushed chips until all sides are covered.
- Finally, set the strawberry on the parchment covered baking sheet to set up. Repeat until the strawberries, chocolate, and chocolate coconut chips are all used up.
- Allow the strawberries to harden at room temperature, then refrigerate until serving. Freeze for long term storage.
