Since we last chatted I graduated from yoga teacher training.
I know, how did that happen so quickly?
The last 6 months were a whirlwind of asana and anatomy and sequencing and while many times during training I felt like I was a hot mess I know now that I was exactly where I needed to be.

I have no current plans to teach, but the stuff I learned in training has forever changed the way I see yoga, myself, and really everything around me.
When I was struggling to make the big decision– to YTT or not to YTT, I asked a few former students for advice.
“Just do it,” they said.
“It’ll change your life,” they said.
They weren’t wrong.
So now I’m going to say the same thing to you in a different content.

It’s banana-y, nutty, chocolate-y, crunchy, and sweet.
These Chunky Monkey Superfood Banana Chip Bites are like that but way better.
They’re better because they’re made with clean ingredients that melded together taste like candy!
We start with a banana base and load them up with superfoods like coconut, goji berry, dark chocolate, and peanuts.
I’m guessing you might already have all of the ingredients to make these Chunky Monkey Superfood Banana Chip Bites.
But let’s check to be sure.
Here’s what you need:
- Bare Snacks Banana Chips
- dairy-free dark chocolate (preferably 70% or higher)
- unsweetened shredded coconut
- goji berries
- peanuts
That’s it!
This recipe starts with Bare Snacks Banana Chips.
If you’ve never tried these 1-ingredient banana chips before, you need to!
Bare Snacks Banana Chips are made from fresh bananas that are sliced and slowly baked to a perfect crunch.
I love them because they’re simple and delicious without any added oils or sugars.
They’re a convenient crunchy anytime snack that I recently decided is the perfect naturally sweet base for a chunky monkey situation.
OK, so, this recipe is all about preparation.
There are only have 5 ingredients to juggle, but you need them measured and accessible for assembly.
I like to empty the banana chips onto a plate or bowl and measure the toppings into prep bowls before starting.
Line a baking sheet with parchment paper as if you were about to bake cookies.
This is for catching all of the future melted dark chocolate– get excited.
Once your ingredients are measured and prepped let’s start!
Melt the chocolate on the stovetop in a saucepan over medium-low heat, stirring constantly to prevent burning.
Transfer the melted chocolate to a bowl and dip the banana chips in until half way covered on both side.
Transfer the freshly dipped banana chip to the parchment lined baking sheet.
Repeat this method until all of the banana chips are partially chocolate covered!
Now for toppings.
While the chocolate is still warm and gooey, sprinkle the banana chips with shredded coconut, crushed peanuts, goji berries, and mini chocolate chips.
If you’re looking for a lower sugar option, try subbing cacao nibs for the dark chocolate chips.
I like the really load up the melted chocolate half with toppings, so don’t be afraid to go big!
Allow the banana chips to cool before serving, but I won’t judge you if you try a few with warm melted chocolate.
For quicker cooling, transfer the pan to the freezer, or allow to sit at room temp until solid.

Ingredients
- Bare Snacks Banana Chips
- 1/2 cup dairy-free dark chocolate, melted + more for topping
- 1/2 cup peanuts, crushed
- 1/4 cup unsweetened shredded coconut
- 1/4 cup goji berries
Instructions
- Open the banana chips and add them to a plate. Measure out the dark chocolate, unsweetened shredded coconut, goji berries, and crushed peanuts and set aside. Line a small baking sheet with parchment paper and set aside.
- Melt the chocolate in a saucepan over medium-low heat, stirring consistently to avoid burning. Transfer to a bowl.
- To assemble your Chunky Monkey Superfood Banana Chip Bites, dip banana chips into the melted chocolate, covering about half of the banana chip in melted chocolate. Drain excess chocolate and transfer the banana chip to the parchment lined baking sheet. Repeat until all of the banana chips are half coated.
- Sprinkle unsweetened coconut, crushed peanuts, dark chocolate, and goji berries on the melted chocolate. Transfer to the freezer for quick-cooling or leave at room temperature for 45-60 mins to allow the chocolate to harden. Enjoy!
