I was the latter, sandwiched between hundreds of sequined dresses and dapper suits at a Great Gatsby themed Masquerade Ball when the clock struck 12.
I used to expect some epic change in the split seconds between 11:59 and 12:01 but now I kind of roll with it.
New year, same me.
But new eats can be fun, and I thought we could kick things off with a healthy snack.
These Coconut Cashew Cookie-Dough “Snowballs” require only 5-ingredients with zero added sugars, while being gluten free and paleo.
The only new year ball drop I *really* care to watch, ya know?
Why Meal Prep Is Important
I didn’t really do the whole “resolution” thing, but I did make some serious intentions for myself, and one of those was to start meal prepping again.
When I quit my day job to pursue Flora & Vino full time, I knew that meant working from home, which also meant I don’t need to meal prep anymore, right?
Wrong. So wrong.
There is nothing worse than a hangry photographer (AKA me) photographing an edible arrangement, practically salivating all over the lens while the food gets cold.
In fact, I might argue that it’s even more important that I meal prep now.
Water, water, everywhere, nor any drop to drink?
Kind of like that, but with eats.
So let’s start with some healthy snacks.
How to Make Coconut Cashew Cookie-Dough “Snowballs”
I love these Coconut Cashew Cookie-Dough “Snowballs” because they literally taste like cookie dough.
They’re packed with simple whole foods ingredients like cashew butter, almond or oat flour, Medjool dates, and coconut.
I tested both almond and oat flour in the batter and both yield tasty bites!
I prefer the almond flour for more moisture and a great grain-free option, but both work in this recipe.
The key here is to use super juicy Medjool dates to achieve a sticky dough.
If you only have dried out dates, revive them with a bath of hot water and you’re good to go!
How to Serve Coconut Cashew Cookie-Dough “Snowballs”
These Coconut Cashew Cookie-Dough “Snowballs” are perfect to roll up quickly for a compact snack for the week ahead.
Try subbing 1/4 cup of vanilla protein powder for the oat or almond flour if you’re looking for an extra boost, or leave as is for plenty of whole foods power.
Roll them in more shredded coconut for a “snowy” aesthetic or enjoy them bare.
Grab a couple for a mid-morning snack, pre/post workout fuel, or a healthy dessert.
I like to keep mine in the freezer for a chewy chilled treat!

Coconut Cashew Cookie-Dough “Snowballs”

Description
Coconut Cashew Cookie-Dough “Snowballs” made with dates, coconut, and cashews for a naturally sweet, gluten-free, and grain-free snack.
Ingredients
- 1/4 cup cashew butter
- 1/4 cup unsweetened shredded coconut+ more for rolling
- 7–8 Medjool dates, pitted*
- 1 cup almond flour or oat flour (can sub 1/4 of this for vanilla protein powder, if desired!)
- 1–2 TBSP almond milk, as needed
Instructions
- Add the cashew butter, dates, shredded coconut, and almond or oat flour to a blender or food processor and process everything until it’s well-combined, stoping to scrape down the sides as needed. This might take several minutes.
- Add almond milk in 1 TBSP increments as needed to get the blades moving. Be careful not to add too much liquid or the batter will be too wet and sticky to roll.
- Form th ebatter into 1 TBSP balls with your hands and roll them in shredded coconut.
- Store Coconut Cashew Cookie-Dough “Snowballs” in the refrigerator for up to one week!

If your dates are dry, try soaking in hot water for 5 minutes, then drain and add to the recipe

I would recommend subbing in the peanut butter instead of the cashew butter and use 1/4 cup as listed.
