Tonight I went to a young professionals networking event with a friend.
I wore my best pair of dark denim for the occasion and brought out a classic button up shirt that emerged from my closet since my corporate office-dwelling days.
Somehow my name tag got stuck in my hair (I couldn’t make this up if I tried!), which made for the perfect icebreaker for introductions.
“Hi, um, you have a name tag stuck in your hair,” this one guy said and I definitely thought he was kidding, HA HA, until I reached behind my head and tore the words “Lauren, Flora & Vino, LLC” from strands of blonde hair.
Who needs the business cards tucked in my back pocket with publicity like that?
Unfortunately, I don’t have any good brands or eats to report back with, but it was nice to connect with local peers, ya know?
It was also nice to practice my “pitch” to strangers outside of my field who have no idea that this industry exists.
I answered the dreaded question, “So, what do you do?” in different ways, feeling out which one sounded the most me.
Usually, I say I’m a food photographer, recipe developer, and content creator of a plant-based website.
Sometimes I just say I’m in social media.
Both true.

Are you a Chai drinker?
I haven’t always been, and even today I’m picky about my chai lattes.
When I was little the cozy tea always felt too “spicy” for my liking.
They were always too robust, too peppery, too conspicuously CHAI.
Kind of like how I feel about some ginger kombucha flavors today– like, can you tone it down just a tad?
But at least it doesn’t pretend to be anything that it’s not, you know?
Ah, Chai, how much you can teach me about networking with each sip.
Or maybe we don’t sip it.
Maybe we bake it into cookies.
This week I made chai flavored cookies using my current favorite chai tea concentrate.
I love using Rishi Tea Masala Chai Organic Chai Tea Concentrate to make my perfect Chai lattes and this pre-mixed carton also makes infusing cookies with chai flavor easier than ever before!
Here’s what you need:
- ground flaxseed meal
- Rishi Tea Masala Chai Organic Chai Tea Concentrate
- runny almond butter or cashew butter
- unrefined coconut sugar
- baking powder
- cinnamon
- nutmeg
- black pepper
- coconut flour
That’s it!
These cookies are grain-free with the use of coconut flour and lightly sweetened with unrefined coconut sugar.
Rishi Tea Masala Chai Organic Chai Tea Concentrate adds spicy chai flavor echoed by a pinch of cinnamon, nutmeg, and black pepper.
Almond butter replaces oil, making each bite moist and packed with healthy fats.
Try serving them for a delicious dessert.
I suggest pairing them with a homemade chai latte using a 50/50 blend of Rishi Tea Masala Chai Organic Chai Tea Concentrate and warm almond milk!

Coconut Flour Chai Cookies
- Total Time: 25 minutes

Description
Grain-free chai-spiced cookies made with nut butter, coconut flour, and coconut sugar. Infused with chai spices using a convenient chai concentrate!
Ingredients
- 1 TBSP ground flaxseed meal
- 3 TBSP Rishi Tea Masala Chai Organic Chai Tea Concentrate
- 3/4 cup runny almond butter or cashew butter
- ½ cup unrefined coconut sugar
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- pinch of nutmeg
- pinch of black pepper
- ¼ cup coconut flour
Instructions
- Preheat oven to 350°F and line a baking dish with parchment paper.
- Mix flax seed meal and masala tea concentrate together and allow to sit for 5 minutes to gel. Next, add in the nut butter, coconut sugar, spices, and coconut flour and mix well to combine. The mixture should be thick and scoopable, but not dry.
- Use a cookie scoop to portion 1 Tablespoon balls onto the baking sheet about 2 inches apart.
- Bake cookies for 10 minutes then remove from the oven and flatten with a spatula. Return to the oven and bake for an additional 4-5 minutes, until golden brown underneath and slightly brown around the edges. Bake longer for crunchier crispier cookies and less time for softer cookies.
- Enjoy! Store leftover cookies in an airtight container in the fridge or freezer.
