S’mores lovers, this one’s for you.
Camping this summer I had my first ever campfire s’mores at the age of 33.
My friend Anna, camping boss that she is, walked me through the whole process.
From selecting the perfect campsite twigs to the perfect level of marshmallow “burned-ness”, to putting it all together.
There’s photographic evidence of me biting into one, a look of dreamy satisfaction washing over my face, my features lit up from the flash against the dark behind me.
But who says s’mores have to be made with graham crackers?
These Cookie S’mores are a fun twist on s’mores with a cookie encasing with the same gooey good stuff in between.
Make them around the campfire or out of the comfort of your own home this summer!
It might be easy to find good vegan chocolate and vegan marshmallows, but I haven’t been able to find a good vegan graham cracker.
Whether you have or haven’t, you’re going to love this twist on s’mores made with cookies.
Gooey marshmallow and dark chocolate smashed between two of your favorite cookies?
Yes, please.
Here’s what you need:
- your favorite vegan cookies
- Hu Kitchen chocolate bars, broken into squares
- large vegan marshmallows
That’s it!
The key to making the best s’mores is to have all of the parts and pieces ready and accessible.
This means setting out the cookies, marshmallows, and dark chocolate pieces so they’re all ready to assemble and go.
The method here is super simple, so you don’t need to do much to prepare.
First, microwave a marshmallow until it’s warm and expanded.
Place the warm marshmallow onto a square of chocolate and press it between two cookies.
Careful in transporting it to the chocolate– it will be hot!
Wait a second for the chocolate to melt a bit.
Take a big bite and savor!
Repeat to make additional s’mores for all of the happy campers!
Enjoy these Cookie S’mores anytime you’re craving a clean s’mores option.
While these can be made by the campfire, they’re just as easy and delicious to make out of the comfort of your own home.
Go classic with chocolate and marshmallow or mix in some fun flavors by adding nuts, seeds, or berries.
Adjust the number of chocolate bars based on how big the cookies you’re using are.
My cookies were more bite-sized, so I used a single square of chocolate!
