Everyone always gets all worked up about what I’m going to eat for the plant-based Thanksgiving main, and I’m over here loading up on sides like it’s no big deal.
But sometimes green holiday sides can look (and taste) a little less than green, you know?
After being baked and buttered, what was once green is now a soggy chartreuse sight on your plate.

I made this verdant side that’s vibrant and fresh with an easy oil-free dijon tahini sauce.

How to Make a Healthier Green Bean Side
Raise your hand if you love steamed veggies.
I grew up eating them– my mom made us Bird’s Eye frozen veggies with almost every meal, and I would scoop them up without any seasonings, sans a little salt and pepper.
Don’t get me wrong, I love roasted veggies all year round, but sometimes it’s hard to beat a good steamed green.
Green beans are one of my favorite steamed greens, because they cook quickly on the stovetop and are the perfect neutral side to any plant-based main.
But don’t worry, I’m not going to tell you to eat them plain.
I’m going to tell you to eat them with a delicious Tahini dressing.
How to Make a Lighter Green Bean Side Dish
Obviously an F&V Thanksgiving wouldn’t be complete without a little tahini drizzle, am I right?
Like so many recipes, the idea for this recipe came from a hurried dinner situation I found myself throwing together on repeat.
It started with a LOT of steamed vegetables that, in a moment of inspiration, I drizzled with tahini, mustard, and a shake of salt and pepper.
I KNOW.
It doesn’t sounds like much.
But the combination of mustard and tahini tasted so unexpectedly yummy that I started mixing them together, like, all the time.
How to Make the Dijon Tahini
I used Sir Kensington’s Dijon Mustard to spice up this tahini spread.

Dijon Tahini Green Beans
- Total Time: 10 mins

Description
Get your greens in with this saucy side that’s oil-free with a creamy dijon tahini dressing. Perfect to complement your holiday spread.
Ingredients
- 1 lb green beans, rinsed and trimmed
Dijon Tahini
- 2 TBSP runny tahini
- 1/2 lemon, squeezed
- 1/4 cup hot water + more to thin
- 1 tsp Sir Kensington’s Dijon Mustard
- pinch of Himalayan sea salt
- pinch of black pepper
- Sesame seeds, for serving
Instructions
- Add the washed and trimmed green beans to a pot of boiling water and cook them for 3-5 minutes, until they’re vibrant green and just fork tender. Pour them into a colander to strain immediately and rinse with cool water. Set aside.
- Prepare the dijon tahini sauce by adding all ingredients to a mixing bowl and whisking by hand until smooth. Add more hot water as needed to reach desired consistency. It should be thick but pourable.
- To serve, add the warm green beans to a platter and pour the dijon tahini over the beans. Serve them immediately with a sprinkle of sesame seeds.
- Store the leftover green beans and tahini sauce separately in airtight containers in the refrigerator and reheat before serving.

If you rinse the beans in cool water and set aside while you prepare the tahini sauce, how do you warm them to serve. Please advise….
Hi Peta! Rinsing them under cool water just stops the cooking but the beans should still remain pretty warm if served soon. If you are saving for later, you can reheat them on the stovetop or in the microwave. Hope this helps! Let me know what you think! XOXO.
I made this on New Years Day. So easy to make and delicious. For my family I would cut back a bit on the lemon juice in the future as it was a bit tart. I can see using this as a dip for veggies also.

I may have missed something….what amount of hot water do you use to thin the Tahani? Is it 1/4 proportionately to the tahini or 1/4 tsp…or 1/4 cup ??? I tried it last night in a sort of off hand way…… we loved it. Just wanted to know fo rsure.
