Does it ever happen to you that you’re craving cookies but what you really want is the cookie dough?

Luckily, one of my favorite parts of plant-based vegan baking is that all of the cookie dough is edible.

It certainly makes recipe testing easier because I can actually taste the dough before tasting the end goal.

If we ever make it to the baked cookie finale.

So…what if we just went ahead and created a cookie-dough recipe just for eating?

This Edible Cookie Dough is made in 1-bowl with just 4 ingredients that are vegan, oil-free, gluten-free, and refined sugar-free.

You don’t need to turn on the oven, and you don’t need to do any cookie-shaping.

Edible Vegan Chocolate Chip Cookie Dough by Flora & Vino

This isn’t my first time loving on edible cookie dough.

It’s been a favorite of mine since making my Cacao Chickpea Cookie Dough Snackwiches, a delicious batter made with a garbanzo bean base!

However, I know not everyone love beans in their batter, so I’m honoring reader requests for a chickpea-free cookie dough.

This recipe is packed with protein, fiber, healthy fats, and antioxidants!

It’s surprisingly easy to mix up in less than 5 minutes.

Edible Vegan Chocolate Chip Cookie Dough by Flora & Vino

This “cookie dough” is made with an almond flour base.

I used superfine almond flour to achieve the smoothest texture.

If you don’t have almond flour on hand, you can make your own by processing almonds in a blender until it resembles a fine flour.

Careful not to over-mix or you’ll have almond butter!

I used cashew butter in the batter to make things creamy and cookie-like without any added oils.

You can use any nut butter here (peanut butter would be great too!) but I prefer cashew butter for a light neutral sugar cookie taste.

The recipe is naturally sweet from pure maple syrup!

A liquid sweeteners work best in this recipe to add moisture and stickiness.

Taste the dough after mixing and add a little more syrup for sweeter dough, but I think the chocolate evens everything out.

Yes, every respectable cookie dough needs some crave-able chocolate chunks.

I used Hu Kitchen new “Gems” in this recipe.

You’re going to love these Hexagon-shaped chocolate chunks made from organic 70% cacao that are vegan, paleo, and refined sugar free!

Each gem has a rich cocoa flavor, making them a solid choice for both snacking and baking!

Edible Vegan Chocolate Chip Cookie Dough by Flora & Vino

Enjoy this Edible Cookie Dough whenever you need a quick nutritious snack or dessert.

Try making the full recipe and dividing into separate containers for a quick grab and go snack for the week.

I like to store them in weck jars in the refrigerator for a portion sized treat.

Roll the dough into balls for more of an energy ball feel or eat the cookie dough from a bowl with a spoon reminiscent of childhood baking.

I promise mom won’t scold you about this one, though, unless you didn’t leave her any leftovers!

Description

Edible vegan, gluten-free, grain-free, and refined sugar-free cookie dough made with just four ingredients. Scoop into balls or enjoy by the spoonful!


Ingredients

  • 1/2 cup cashew butter
  • 1 1/4 cups superfine almond flour
  • 1/2 cup maple syrup
  • 1 cup Hu Kitchen Gems

Instructions

  1. Add all ingredients to a large mixing bowl and mix until well combined.
  2. Refrigerate for 30 minutes before serving.
  3. Scoop into balls or serve in balls.
  4. Store leftover cookie dough in the refrigerator for up to one week.

    Any other options besides almond flour that are not gluten free you think would work?

I started teaching yoga again this spring. In the I started teaching yoga again this spring. In the midst of cookbook edits and stunning spring weather, I felt called to unfurl my Manduka mat and talk my friends and family through a feel-good flow.

At first, I felt rusty; stumbling through cues and postures. What’s that pose, again? What’s that body part? I forgot options; I forgot pacing, I forgot to balance active poses with rejuvenating rest.

But I’m starting to get it back. The confidence that comes with repetition. The joy that comes from seeing a student let go, watching tangible tension melt away; I’m an audience to mindfulness.

I wanted to become a yoga teacher because it felt like the single greatest gift I could give to another human being. Maybe that’s because it’s one of the greatest gift that I give to myself.

As I get back into teaching, I’m reminded that crafting yoga classes is a beautiful, delicate artform. One that I’m excited and eager to get better at.

I teach vinyasa yoga—A creative flow. I’m currently working on theming my classes—conveying a subtle suggested message through movement, music, and words.

Last Friday I taught my book club and I spent hours working on the soundtrack and the sequence. I shifted around openings and contractions, counted things in threes, and shuffled songs in a clear crescendo towards peak posture, softening into savasana.

It reminded me of the English classes I took in high school. We tirelessly underlined paperback books, searching for themes, motifs, and expressive language with a pink highlighter and red ballpoint pen.

Writing a yoga sequence is kind of like that, but in reverse. This time I’m the author, the creator, the conductor, sprinkling in symbols and allusion and foreshadowing to guide towards the truest version of you.

I strive to talk through the poses with expressive language and concise cues. Watching for reactions, feeling what the collective is feeling, working with them to achieve a union of mind, body, and spirit.
