This past week M and I built a tent in my living room.
A mass of lime green nylon, woven mesh, and sturdy poles erected into a dome in under ten minutes.
As the weather gets warmer, I’m dreaming of summer adventures.
It’s been forever since I slept away from home, and I’m itching to pack up the car with my new camping gear and explore.
Do you like camping?
M will tell you that I’ve never *really* been camping, which is partially true.
I guess I’ve been *glamping*, i.e. sleeping in a camp cabin, with four walls and a roof and a screened in door.
So maybe I’m romanticizing all of it– sleeping under the stars, s’mores, and basking in forest sunlight.
But I think there’s the chance to make a camper out of me, yet.
Everything is starting to feel more and more possible– as people become vaccinated, as the book comes closer to a close, as my camping set is complete.
I’ve also been thinking about easy food to make while in the great outdoors, starting with easy snacks.
These Everything Granola Bites are a great portable snack to make in advance for all of your adventuring this year.
They’re made no-bake with simple ingredients that will fuel all of your summer fun!
These balls are similar in flavor to my Almond Butter Superfood Bars in both ingredients and flavor.
However, this recipe is entirely nut-free with the use of SunButter.
And, instead of bars, we roll them into balls for easy snacking!
These energy bites are mildly sweet, with an unexpected hidden granola crunch.
If you’ve never tried rolling granola into energy balls, you’re in for a treat!
The addition of granola adds texture and crunch with a pop of toasty sweetness.
I like to use a crumbly granola (less chunky) in mine for the best texture and evenly dispersed crunch.
You’re going to love them for a quick no-bake protein-rich snack this spring and summer!
Here’s what you need:
- No-Sugar-Added SunButter
- crumbly granola
- vanilla protein powder
- pure maple syrup
- white chia seeds
- unsweetened coconut flakes
- cacao nibs or dark chocolate chips
That’s it!
This recipe is super simple to make– lending it to Sunday meal prep, snack time, or any time.
Add all of the ingredients to a large mixing bowl and stir the contents until they’re well-combined.
Pro tip: Be playful and creative with your ingredients here!
Some other add-ins that I think would be delicious are:
- goji berries
- dried cranberries
- slivered almonds
- hemp hearts
- raisins
- ground flaxseed
The recipe is very forgiving, so substitute or add in your favorites.
Using a cookie scoop, scoop the dough into approximately 1.5” mounds.
Next, roll the sectioned dough into balls with your hands.
Your hands might get a bit oily as the SunButter releases its natural oils; this is totally normal!
You can enjoy the bites immediately, but I like to refrigerate them for 30-60 minutes to let them set up a bit.
These bites are made oil-free and creamy with the addition of No-Sugar-Added SunButter!
I love using sunflower seed butter for a neutral nutty flavor.
This variety also has a hint of sea salt, which does a nice job of enhancing the sweetness.
Enjoy these Everything Granola Bites as a quick snack or pick me up.
They’re great to make in advance or meal-prep or as a fun snack with kids.
I love to keep mine in Tupperware in the refrigerator then transport them in small bags when I’m on the go.
They’re packed with plant-based protein and healthy fats to keep you satiated you for hours.
Store your bliss balls in an air-tight container in the fridge for up to two weeks.
The balls can also be frozen for long term storage!

Everything Granola Bites
- Total Time: 10 minutes

Ingredients
- 1 ½ cups No-Sugar-Added SunButter
- 1 cup your favorite crumbly granola
- ¼ cup vanilla protein powder
- 2 tbsp pure maple syrup
- 1 tbsp white chia seeds
- ½ cup unsweetened coconut flakes
- ½ cup cacao nibs or dark chocolate chips
Instructions
- In a large mixing bowl, add all of the ingredients (SunButter, granola, protein powder, maple syrup, chia seeds, coconut flakes, and chocolate chips) and stir until well-combined.
- Using a cookie scoop, scoop the dough into 1.5” mounds and roll them into balls with your hands.
- Refrigerate the bites until they are ready to eat. Store the leftovers in an airtight container in the fridge for up to one week.
