Where’s the coolest place you’ve watched fireworks?
My favorite is a local vineyard here in Virginia– it’s really high up on a peak and sitting outdoors on its grounds you can see all the way to DC on the skyline.
The winery doesn’t put off their own fireworks, but then they don’t need to.
After sunset, big bursts of color appear along the horizon, in every direction.
I love to sit, perched on a blanket on the lawn, Ooohing and Aaaahing and pointing every which way.
Why watch one fireworks show when you could watch 20?
This year, I’m bringing dessert.
When it comes to red, white, and blue treats, my inclination is always towards fresh berries.
No artificial food dyes here, babes, just a little organically grown patriotism.
If you’re like me, you might be eyeing the flag cakes and layered popsicles with apprehension.
They’re gorgeous, but will I have time to make ’em?
Let’s make something red, white, and blue and FAST.
These Frozen Fruit Kabobs only take 10 minutes to throw together for a healthy and nutritious summer treat!
So we start with fruit.
Since I’m working the whole red, white, and blue things, I decided to use a mix of my blueberries, raspberries, strawberries, and sliced banana.
If you’ve been following me for a while, you know I had trouble eating raw bananas for a while, but I’m happy to report I’ve reincorporated them back into my diet in bits and pieces and am feeling OK.
However, if you’re avoiding bananas for whatever reason, try subbing pineapple here instead for your “white” fruit element.
You don’t need to do much to prepare them– just rinse the berries, hull the strawberries, and slice the banana.
If only all recipe prep was this pretty and simple.
I’m the biggest time optimist you’ll ever meet– particularly when it comes to holidays.
I *always* think I’m going to do the festive workout, tidy everything around the house, and have the time to make the complicated recipe, too, all before family comes over.
And what do you think the first thing that always gets knocked off the list?
The first time I made these kabobs was a few years back when I needed a treat to share within the hour.
I had lots of fresh fruit and kabob sticks leftover from grilling and I furiously skewered berries and bananas, hoping the result was Pinterest perfect.
Of course you can always just eat frozen fruit off of a stick, but I thought we could and should take these sticks to the next level.
The next level being drizzled in dark chocolate and rolled in a crunchy pineapple coconut topping.
For the chocolate, I recommend using something 70% or higher melted into a bittersweet liquid.
I crushed Bare Snacks new Pineapple and Coconut Chip Medley and sprinkled them over the melted chocolate for a crunchy no-sugar-added finish.
If you don’t have Bare Snacks new Fruit Medleys (check them out– they’re so fun!) try sprinkling unsweetened shredded coconut and freeze-dried fruit here instead.
These Frozen Fruit Kabobs are a fun low-sugar idea for entertaining, kids, and healthy desserts and snacks.
If you’re freezing your fruit, stick them in the freezer for at least an hour before serving.
Or, if you’re in a hurry like I generally am on holidays, serve them chilled from the fridge instead.
Swap out the fruit to make your own variations.
And they don’t have to be red, white, and blue!
Choose your favorite fruits and mix in your favorite toppings, too.

Frozen Fruit Kabobs

Description
Your favorite red, white, and blue frozen fruit kabobs on skewers and drizzled with melted dark chocolate. Perfect for a healthy fourth of July treat!
Ingredients
- hulled strawberries
- blueberries
- raspberries
- sliced banana
- dark chocolate, melted
- Bare Snacks Medley Pineapple and Coconut Chips
Instructions
- Wash the berries, hull the strawberries, and slice the banana. Set aside.
- Line a cookie sheet with parchment paper and set aside.
- Using wooden skewers, skewer the fruit in a red, white, and blue pattern, alternating until all of the berries and bananas are used.
- Carefully lay the kabobs on the parchment lined cookie sheet and set it in the freezer for at least 60 mins, or more, if possible.
- Remove the cookie sheet from the freezer. Warm a dark chocolate bar over medium low heat until fully melted. Drizzle the melted chocolate over the frozen kabobs and sprinkle them with crushed Pineapple Coconut Medley. Return the pan to the freezer to set up, or serve immediately.
- Store any leftover Frozen Fruit Kabobs in the freezer for 1-2 days, though best when fresh!
