If you’re like me, the morning after the big meal you hastily turned on the Christmas music.
Something about blasting Michael Bublé and Mariah Carey instantly transports me into the holiday spirit.
Do you have your tree and decorations up yet?
I’m 50% of the way there.
I have the miniature red and white tree-skirt I couldn’t resist buying from Target, before, you know, finding a mini tree to go with it.
The ornaments are out too; a heart-warming hodgepodge of handmade childhood ornaments, classic glass balls, hanging figurines dated by birthdays and ages, glistening cupcakes and my favorite, a sparkling avocado toast (no explanation needed).
So when I finally get my tree, I’ll be decorating it with all of this plus Gingerbread Bliss Balls.
Because everyone needs a little festive fuel to deck the halls!
These gingerbread inspired energy bites are ready in under 10 minutes to fuel you through your busy holiday season.
The Best Holiday Snack
I’ve been making variations of these gingerbread balls for a while now.
I can trace them to several Christmases past, when I first thought it would be clever to make seasonal “balls” to echo the decorative balls of the season.
Ohhhh, I see what you did there.
But edible ornaments are the best, right?
These Gingerbread Bliss Balls have all of the warming gingerbread flavor without any of the bake time, or the bread, for that matter.
They’re entirely vegan, gluten-free, and grain-free, and naturally sweetened with Medjool dates and a touch of molasses.
What You Need to Make Gingerbread Bliss Balls
Here’s what you need to make them:
- Medjool dates
- oat flour
- blackstrap molasses
- cinnamon
- ground ginger
- Organic SunButter
- coconut flour (optional for topping!)
That’s it!
How to Make Gingerbread Bliss Balls
The method is simple; throw all of these ingredients into a blender and pulse until you have a sticky ball.
I recommend adding the dates and oat flour in first to achieve a smooth base.
Then add in the remaining spices, molasses, and SunButter to ensure they get well mixed.
I love using Organic SunButter to add creaminess and healthy fat to this recipe.
Not to mention, a spoonful really saves the day when the blender blades feel solidly stuck in gingerbread bliss.
The result is a compact energy ball that has an uncanny taste like gingerbread cookies.
Despite their cookie flavor, each bliss ball is packed with protein, fiber, complex carbs, and healthy fats!
Basically, it’s the kind of snack you want (and need) to have on hand all winter long.
How to Serve Gingerbread Bliss Balls
These Gingerbread Bliss Balls are perfect to whip up this holiday season for a quick snack or dessert bite.
I like to store mine in the freezer for the best taste and texture.
If you’re looking for a grain-free option, try using sunflower seed flour or almond flour instead of oat flour.
Don’t have molasses on hand?
That’s OK– try subbing date paste or add a few extra dates for a similar flavor.
I love rolling mine in coconut flour or shredded coconut for a dusted “snowy” appearance, but you can also leave them naked!

Gingerbread Bliss Balls
- Total Time: 10 minutes

Description
Gingerbread inspired energy balls made with oat flour, Medjool dates, molasses, and a festive spice blend. Perfect for a holiday season pick me up.
Ingredients
- 1 cup Medjool dates, pitted (if dry, soak in warm water for 10 minutes, then drain)
- 1 cup oat flour (or sub almond flour)
- 2 TBSP blackstrap molasses
- ½ tsp cinnamon
- ½ tsp ground ginger
- 1/4 cup Organic SunButter (or sub another seed or nut butter of choice)
Instructions
- Combine the dates and oat flour in a blender or food processor and pulse until the dates are well chopped.
- Add in the rest of of the ingredients into the blender or food processor and pulse until it forms into a sticky ball. If the dough is too stiff, add another date or two or a spoonful of SunButter.
- Scoop dough into ~1.5 TBP balls with a cookie scoop and place on a parchment paper lined baking sheet. Sprinkle with coconut flour and place in the refrigerator or freezer to harden.
- Enjoy! Store leftovers in the refrigerator or freezer for several weeks.
