When I like something, I want it in all the colors.
The Gap had an incredibly soft line of basic t-shirts a few years ago and I’m fairly certain I own one in every color.
And there were a lot of colors, guys.
I remember standing there in the store, squinting, trying to decide between magenta and turquoise before I threw them all crumpled on the cashier register.
Shop the rainbow?
Of course, this applies to my breakfasts too.
I was a little nervous to share these because sometimes green things elicit that knee-jerk “you can’t leave the table until you finish your spinach” reaction.
These Glowing Green Pancakes, however, guarantee to have you happily seated until you get up…to make some more.
If pancakes are good brown one day, why not Glowing Green the next? I love creating spin offs of my favorite recipes inspired by new color and taste combinations.
And of course, I wanted to share a fun Saint Patrick’s Day recipes to share with you, because no holiday goes unnoticed here at Flora & Vino.
On Saint Patrick’s Day my elementary school painted tiny green footprints all over the hallway walls and ceilings, marking the path of leprechauns that liked to party after hours.
We checked our hand made leprechaun traps and squealed with delight when we found (chocolate) gold coins stuck to double sided tape.
These pancakes are kind of like finding edible gold in a leprechaun trap.
All the greedy anticipation and a whole lot of yum at the end.
After we crumpled up our leprechaun “gold” wrappers, milk chocolate melting in our mouths, we scanned the classroom, ready to pinch the kid who screamed, “But my underwear is green!”
If you make these pancakes, it totally counts as wearing green in my book. Because you are what you eat, right?
Tell all those who might reach out and pinch you, “Hey, I had green pancakes this morning…what color was YOUR breakfast?”
Just like that.
And suddenly they’ll be questioning their breakfast color scheme.
My adult Saint Patrick’s Day is really just an excuse for me to eat green all day, starting with these Glowing Green Protein Pancakes.
The green color comes from the addition of two of my favorite green things: spinach and pistachios.
Pistachios are a nut I tend to forget about, but I shouldn’t, because they’re one of the “oldest” nuts commonly consumed.
They’re also loaded with vitamins, minerals, protein, and healthy fats.
Lately I’ve been throwing them in all of my spring recipes and I love the cashew-y crunch and verdant green it adds to my dishes.
If you don’t fancy the idea of greens in your cakes, don’t worry, you can’t taste it!
The spinach kind of melts into the recipe undetected, giving your pancakes a glorious green color and all of the nutritional benefits without a grassy flavor.
Some other ideas for green flourishes are a pinch of spirulina, matcha, or green grapes.
This stack will certainly catch a leprechaun (and everyone else in your house) a colorful healthy breakfast.

Description
Protein pancakes packed with all of your favorite greens! Gluten-free, grain-free, refined sugar free, tons of fun to make and even more fun to eat.
Ingredients
Glowing Green Protein Pancakes
- Nonstick spray (I used avocado oil spray)
- 1 TBSP flaxseed + 3 TBSP filtered water
- ½ banana
- 1/2 TBSP unsweetened almond milk
- 1/4 cup (~1 scoop) protein powder ( I used Tone It Up Vanilla– some brands may work better than others)
- 1 TBSP pistachios
- big handful of spinach (or sub your favorite leafy green)
For Serving
- hemp hearts
- maple syrup
- sliced kiwi
Instructions
- Warm a skillet over medium heat with a little bit of nonstick spray or avocado oil.
- In a blender or food processor, combine 1 TBSP flaxseed + 3 TBSP filtered water and let sit for a few minutes to create your “flax egg”.
- Next, add banana, almond milk, protein powder, pistachios, and spinach and blend until well combined.
- Spoon mixture onto the skillet to form several pancakes.
- Heat for 5 minutes, or until golden brown underneath, then flip and heat for 3-5 on the other side. Transfer pancakes to a plate and top with fresh sliced kiwi, hemp hearts, pistachios, and maple syrup.
