I’m soaking up all of this spring daylight like it’s my job.
For the past few weeks I’ve been loving waking up early and getting an early morning workout in so I can enjoy the sunshine later in the day.

I used to do fasted morning sweat seshes with no problem, but lately I feel like I need a bit of edible fuel in the tank to get things to get moving.
One of my favorite things to grab when I really want pancakes already, but would also really like to finish my Tone It Up app workout first, is a raw bar!

Since we’re being honest, I’m a bit of a raw-bar snob, and I have an entire raw bar drawer here at home to prove it.
Yes, you heard me, a whole drawer dedicated to RAW BAR goodness.
When fully stocked, it can be a little challenging to shut.
I like to have all of my favorite brands on stock for simple snacking.

What You Need to Make Grain-Free Apricot Energy Bars
Here’s what you need to make Grain-Free Apricot Energy Bars:
- Fruit Bliss Organic Turkish Apricots
- raw cashews
- pepitas
- almonds
- shredded coconut
That’s it!
How to Make Grain-Free Apricot Energy Bars
Prepare an 8 X 8 baking dish with parchment paper.
Add the apricots, cashews, pepitas, half of the almonds, and optional shredded coconut to a high-speed blender and pulse everything until it’s well-combined, scraping down the sides as needed to recombine.
Once you have a thick sticky paste, add in the remaining 1/2 cup of almonds and pulse until just slightly broken.
Press the mixture into the parchment lined baking dish and refrigerate it for at least 1 hour before cutting into bars.
Serve the bars immediately and store any leftover bars in an airtight container in the refrigerator for 1-2 weeks.

This recipe relies solely on the dried apricots for “stickiness”, so you want to use the juiciest dried apricots that you can find.

- 1/2 cup raw cashews

This will last about 1-2 weeks in the fridge and can be frozen for long term storage. I would recommend eating them within a week for the best taste and texture!
