You might also find it amusing that I *just* completed my first two runs of 2022 this March.
As warm weather teases us here in Maryland, I’m slowly getting my running momentum back.
Those 26 miles seem unreachable right now, but that’s kind of the point, right?
After my half marathon a few years ago, I couldn’t imagine running anything further.
Which is why I want to do it; to prove to myself that I’m stronger, more resilient, more capable than I could imagine.
Well, that, and because I love running.
Needless to say, for the remainder of the year, I’m going to need all of the fuel.
This Green Tahini Date Shake is the fresh shamrock-colored shake you need for Saint Patrick’s Day.
It’s got creamy tahini, Medjool dates, a big handful of leafy greens, and plenty of plant-based protein.
Let’s shake things up this spring!
The Inspiration for Green Tahini Date Shake
My protein shakes usually aren’t complete without a handful of greens.
This recipe is inspired by my Tahini Date Shake, but made a bit greener.
I rediscovered the recipe this spring and started making it again, but with a few modifications deserving of its own post.
This shake is sweet, tangy, and flavorful while being packed with protein, fiber, and leafy greens!
It tastes like a milkshake but is packed with nutrition!
What You Need to Make a Green Tahini Date Shake
You need:
- steamed and frozen cauliflower
- almond milk
- vanilla plant-based protein powder
- runny tahini
- Medjool dates
- frozen spinach or kale
That’s it!
How to Make a Green Tahini Date Shake
While this recipe takes about 5 minutes to throw together, it does require a *little* planning.
Usually I pre-freeze my spinach by placing whatever greens are left at the end of the week in silicone or ziplock freezer bags.
You also need to pre-steam and pre-freeze your cauliflower.
Steam the cauliflower florets on the stovetop, allow them to cool, then transfer them to a silicone or ziplock freezer bag.
To make this shake, add all of the ingredients to a high-speed blender and blend everything until it’s well incorporated and creamy.
Add more almond milk for thinner shakes and more frozen cauliflower for a thicker consistency.
The contents should blend up fairly easily.
You Can Control the Sweetness
The great thing about this shake is that you can control the sweetness.
Add in 1-2 Medjool dates depending on your taste buds.
If you have old dried up dates, try soaking them in warm water for ~10 minutes before incorporating into this recipe.
This will revive them and lead to easier blending!
I recommend adding one date, then tasting the shake before adding another.
I find I prefer ~2 dates for this recipe to offset any bitterness of the greens.
The Best Greens for Green Tahini Date Shake
Oh, let’s talk about greens.
I recommend using frozen spinach or kale for your greens, but any leafy green will work.
Personally, I prefer the taste of spinach, but M loves kale in his shakes!
While you can add fresh or frozen greens in this recipe, I recommend frozen to further chill and thicken the shake!
Fresh leafy greens will make more watery, thinner shakes, and frozen greens will yield thicker, fluffier shakes.
Add Your Favorite Toppings
Once you’re happy with the sweetness levels and the consistency, serve it up!
Pour the blender contents into a glass and serve it immediately with your favorite toppings!
I love mine with a sprinkle of granola and a bit of tahini drizzle.
Enjoy it immediately with a straw, spoon, or by slurping!

If you don’t have tahini, you can substitute any nut or seed butter, but I think the tahini and date combination is unparalleled.

Ingredients
- 1 cup steamed and frozen cauliflower
- 1 cup almond milk (+more if you want a thinner consistency)
- 1 scoop vanilla plant-based protein powder
- 1 TBSP runny tahini
- 1–2 Medjool dates*, pitted
- 1 giant handful of frozen spinach or kale
For serving
- your favorite granola
- tahini drizzle

- Combine all ingredients in a high-speed blender and blend everything until it’s well incorporated and creamy. Add more almond milk for thinner shakes and more frozen cauliflower for a thicker consistency.
