It was a little overcast here in Virginia, but I was fortunate to be able to spend time outdoors and with family.
With the workweek back in full swing, I felt like we needed an easy pragmatic (but delicious) breakfast to start off the week, what do you think?
Since we didn’t get much sun this weekend, I decided to create my own in overnight oats fashion.
These Lemon Berry Overnight Oats are the perfect lazy summer breakfast that only require a ten minutes mix-up the night before the breakfast of your dreams!
Summer time, and the eating’s EASY.
What You Need to Make Lemon Berry Overnight Oats
You’re going to love this mixture of tart lemon with creamy yogurt and sweet berries to create an overnight oats blend that’s ready for a sunny day.
You might not think that oats would pair well with the acidity of lemon, but the addition of almond milk yogurt keeps them super creamy and delicious.
Here’s what you need:
- gluten-free old-fashioned rolled oats
- unsweetened almond milk
- unsweetened almond milk yogurt (I used this one!)
- lemon juice
- lemon zest
- chia seeds
- vanilla protein powder
- maple syrup
- fresh berries
- granola
That’s it!
How to Make Lemon Berry Overnight Oats
This recipe is super simple to make.
Combine all ingredients in a mason jar or glass container.
Lightly mix with a spoon and refrigerate them overnight.
That’s literally it!
In the morning, taste the overnight oats and add more lemon for brightness and maple syrup for sweetness, if needed,
Serve the overnight oats with fresh berries, more lemon zest, and a spoonful of your favorite granola.
Store overnight oats in the refrigerator for up to one week.
Swaps and Substitutions
No veg, who dis?!
This might be the first overnight oat recipe on the blog to go sans veggies.
I know, I know, I thought about sneaking some in the mason jar, but I love the lightness of these oats without the extra bulk.
If you’re feeling a veggie mix-in, try adding some steamed cauliflower rice like in my Creamy Cauliflower Overnight Oats.
Depending on what yogurt you use, the consistency may need a bit of tweaking.
Don’t worry, overnight oats are very forgiving.
To thicken up runny oats, add another teaspoon or two of chia seeds. For thinner oats, add a bit more almond milk or yogurt.
I prefer mine a bit on the thicker side, like my smoothie bowls.
The tartness and sweetness can also be adjusted after the fact.
Note: I prefer mine a little on the tart side, so adjust and add more lemon for brightness and maple syrup for sweetness until you find your ONO Nirvana.
How to Serve Lemon Berry Overnight Oats
Enjoy these Lemon Berry Overnight Oats whenever you’re craving a quick breakfast.
They’re packed with protein, fiber, and healthy fats to start your day strong.
Try adding a tablespoon or more of your favorite protein powder for an extra boost of protein.
I like to double the recipe on Sunday to make a few jars for busy workweek breakfasts.
Serve them topped with your favorite fresh berries and spoonfuls of granola.
The pictures show a blend of raspberries and blackberries in mine, but any berry will work!

- a few spoonfuls of your favorite granola
