Guys, it’s been a long freaking month.
I think it’s safe to say that March came in like a lion and went out like…a bigger lion.
I’ve been trying to prioritize making my home my sanctuary for the foreseeable future.
But, F&V wouldn’t be in business if there wasn’t a huge kitchen mess.
The towering kitchen mess today looked completely disproportionate to the sweet little bites it produced.
But hey, at least I have a stash of these Lemon Chia Bliss Balls to munch on in said sanctuary, yeah?
These sweet citrus energy bites are perfect to make ahead for a spring inspired snack!

You’re going to love these bites that are vegan, grain-free, gluten-free, and oil-free!
The recipe comes together in 10 minutes for a sweet no-bake snack that’s packed with protein, healthy fats, and complex carbs.
They’re wonderfully date-sweetened from with no added sugars.
What You Need to Make Lemon Chia Bliss Balls
Here’s what you need:
- Medjool dates
- Bob’s Red Mill Super-fine Almond Flour
- cashews
- chia seeds
- lemon juice
- lemon zest
That’s it!
How to Make Lemon Chia Bliss Balls
I like to start this recipe by blending the dates first so we don’t have to worry about them clumping up later.
Next, we blend the cashews and almond flour into a mixed nut flour.
I used Bob’s Red Mill Super-fine Almond Flour in this recipe to create the bliss ball batter base.
I love this flour for baking, but it’s also fantastic for no-baking!
This soft flour adds moisture and smooth nutty flavor to these bites.
Add back in the Medjool date purée along with fresh lemon juice and lemon zest and blend until you have a sticky sweet ball.
Stir in chia seeds to add some bulk and texture.
Roll the dough into balls and enjoy immediately!
Swaps and Substitutions
These Lemon Chia Bliss Balls are perfect for spring inspired meal prep!
If you want to mix things up, try using poppy seeds instead of chia seeds.
You can also try using walnuts or any nut instead of cashews, but I think the lemon-cashew is a nice and light flavor combo.
If the balls are too sticky, try adding a little extra almond flour or wet your hands with water before rolling out.
Try rolling the balls in coconut for a fun topping or leave them naked!
I like to keep my Lemon Chia Bliss Balls in the fridge or freezer for an easy accessible snack.

Description
Energy balls made with almond flour, dates, cashews, chia seeds, and plenty of lemon. Mix them up for a clean spring snack!
Ingredients
- 1 cup Medjool dates, pitted and packed
- 1 cup Bob’s Red Mill Super-fine Almond Flour
- 1 cup cashews
- 2 TBSP lemon juice
- 1 TBSP lemon zest
- 1/4 cup black chia seeds
Instructions
- Add the Medjool dates to a high speed blender or food processor and process until you have a thick sticky paste. Transfer to a bowl and set aside.
- Next, add the almond flour and cashews to the blender and process until you have a fine flour.
- Add back in the Medjool dates, lemon juice, and lemon zest and process again until you have a thick sticky dough.
- Transfer dough to a large mixing bowl and fold in the chia seeds with a spatula.
- With a cookie scoop, scoop ~1.5 TBSP portions and roll into balls with your hands. If the dough sticks to your palms, try lightly wetting your hands before rolling.
- Enjoy immediately! Store leftover balls in the fridge and freeze for longterm storage.
