If you’d told me a few years ago that I’d be steaming and freezing zucchini to throw into shakes and then blogging about it, I would have laughed in your face.
I’m not sure what part would have been funnier– the zucchini in the blender part or the being a full time blogger part.
Both would have elicited a big hearty belly laugh.
But here I am, friends, taking my steamed and frozen zucchini and the blogging details v. seriously.
Exhibit A, this Low-Sugar Blueberry Zucchini Almond Butter Shake, is no laughing matter.
It’s super creamy, packed with healthy fats, protein, veggies, and low in sugar, with the most luscious Wendy’s frosty consistency.
Jackpot.
I remember vividly grabbing drinks with a girlfriend a few years ago.
At the time I wasn’t feeling very warm and fuzzy about my job (technical writer), and when she asked me what I DID want to do, I said timidly, “Well, I think, I sort want to be… a food blogger.”
Silence.
And then she laughed good-heartedly like she was laughing with me and said…”Don’t we all!”
Well.
I knew right then and there that was going to make this whole blogging about food thing happen.
Zucchinis be darned.
So, I guess I just wanted to say that I appreciate you, dear friends, for giving me this space and opportunity to be me.
And for trying all of my quirky recipes with veggies in places you didn’t think veggies should ever go.

YOU GET ME.
I created this combo one morning not so long ago when craving something cold and creamy and lower in sugar (most mornings here to be honest!).
Fortuitously, I happened to be out of frozen cauliflower (my usual go-to smoothie “fluffer”), so I used some steamed and frozen zucchini instead.
And let’s just say the zucchini did something magic here, guys.
Combined with the roasted almond butter, sweet bluebs, and chia seeds, it created a mouthwatering masterpiece that I found myself recreating for the rest of the week.
The result is thick and “spoonable”, sweet but not too sweet, oh so creamy, and satiating.

It’s a great way to use any extra zucchinis you’ve got lying around the fridge this summer.
For thinner shakes, add more almond milk, and for thicker shakes (my favorite), add a few more frozen blueberries or zucchini.
Try subbing frozen cauliflower for the frozen zucchini if you don’t have it prepared.
I like to eat mine post-workout with extra blueberries and almond butter on top.

Low-Sugar Blueberry Zucchini Almond Butter Shake

Description
Easy low-sugar shake that’s packed with protein and hidden zucchini! Perfect for a quick breakfast or snack using leftover zucchini from the fridge!
Ingredients
- 12 oz. unsweetened almond milk
- 1–2 scoop vanilla protein powder
- 1/2 cup frozen blueberries
- 1 cup steamed and frozen green zucchini (or sub frozen caulilflower)
- 1 TBS roasted almond butter
- 1 TBS ground chia seed (or sub flaxseed or whole chia seed)
Instructions
- *Ensure that you have steamed and frozen zucchini on hand or make it at least 8 hours in advance before starting recipe*
- Add all ingredients to high speed blender and process until smooth and creamy. Add more almond milk to reach thinner consistency and a little more blueberries or zucchini for thicker consistency. Pour into a large mason jar and enjoy topped with fresh blueberries, almond butter, and ground chia seeds.

You can, but I almost always leave them on and it doesn’t effect the taste or consistency.

Yes! I just slice the zucchini into rounds, steam for 5-8 minutes on the stovetop (until fork tender). Let the zucchini cool then transfer to a freezer bag and freeze for shakes! Let me know what you think when you try!
