This past weekend I visited Colonial Williamsburg with my cousin, my cousin’s husband, and M for a couples weekend getaway.
Williamsburg has a special place in my heart because it reminds me of the family trips we took there as a kid.
I have fond memories of ginger cakes from The Raleigh Tavern Bakeshop, strolling down Duke of Gloucester Street, and shopping in the market square.
So it was a lot of fun to be there with family and show M all of my favorite spots!
We walked the historic area by day, dined in taverns by night, and spent the after hours at a beautiful Bed & Breakfast.
While historic Colonial Williamsburg doesn’t exactly lend itself to the vegan diet, there were plenty of “hip” places nearer to the William & Mary campus.
It was a lovely weekend, and I came home with a full heart and a well-rested mind.
When we got home, I felt so refreshed and rejuvenated I created this Maple Cinnamon Baked Mochi.
This unique sweet snack or dessert starts with oven-baked mochi dipped in maple syrup and finished with cinnamon and toasted pecans.
It’s the perfect energizing fall bite!
Have you ever made anything with mochi before?
While we were in Williamsburg the four of us brainstormed mochi recipes.
Let’s see…there was mochi with ice cream, fruit-filled mochi, and, most notably, mochi gnocchi.
Say that 10 times fast!
The winner, however, was this Maple Cinnamon Baked Mochi.
Here’s what you need to make Maple Cinnamon Baked Mochi:
- Eden Foods Sweet Brown Rice Organic Mochi
- pure maple syrup
- cinnamon
- toasted pecans
That’s it!
If you’ve never heard of mochi before, let me give you a brief overview.
Mochi is a Japanese cake made from pounded rice.
It’s considered a traditional celebratory food in Japan and is thought to promote vitality, health, and strength.
Eden Foods Sweet Brown Rice Organic Mochi is steamed, pounded, certified organic 100% whole grain brown rice.
It’s naturally vegan and gluten-free and is an excellent source of manganese and B3.
These mochi blocks are vacuum packed so you don’t need to refrigerate them!
The blocks may seem hard when you first unpack them, but the mochi puffs and softens into chewy nuggets with a crisp crust when they’re pan-fried or baked.
The best part about Eden Foods Sweet Brown Rice Organic Mochi is they can go sweet OR savory!
You can pan-cook, bake, grill, boil, or deep-fry them.
I loved the baking method without any added oil because it was so easy with minimal clean up.
You can also serve these cakes with salty or sweet toppings.
I found that I enjoyed the lightly sweet version the best, but these cakes are delicious with soy sauce, soups, or stews, too!
First, preheat the oven to 450°F and line a baking sheet with parchment paper.
Remove the Eden Foods Sweet Brown Rice Organic Mochi from the packaging and arrange them on the baking sheet so none of the blocks are touching.
Transfer the baking sheet to the oven and bake them for 8-10 minutes.
The mochi is done when the blocks are puffed up in size and golden brown on the edges.
If some of the blocks look like they’re oozing after being baked, that’s totally normal!
While the mochi is baking, add the pecans to a small saucepan over medium-low heat.
Heat them for 5-8 minutes, or until the pieces are lightly brown and fragrant.
Toss the pecans frequently in the pan to ensure all sides get nice and toasted!
Add the maple syrup to a small bowl and set aside.
Dip the freshly baked mochi in the maple syrup bowl and flip it to coat all sides.
Let any excess maple syrup drip off of the mochi, then transfer the coated mochi to a plate.
Sprinkle the mochi with cinnamon and add a spoonful of toasted pecans on top.
Enjoy the baked mochi immediately with your hands or a fork and knife!
Enjoy this Maple Cinnamon Baked Mochi as an energizing snack or dessert.
It’s lightly sweet and chewy with the perfect amount of sweetness and spice.
I used pecans, but any toasted nuts will work for some nutty crunch on top.
For some fun flavor variations, try adding fresh berries or chocolate drizzle on top.
You can store any leftover baked mochi in the refrigerator for 2-3 days.
However, this is one of those recipes that’s best fresh, so I recommend enjoying it freshly baked!

Ingredients
- 1 pack Eden Foods Sweet Brown Rice Organic Mochi (6 blocks of mochi)
- 1–2 TBSP pure maple syrup
- dash of cinnamon
- ¼ cup toasted pecans
Instructions

Looks delicious! You’ve got me machinating for mochi!
Though I am confused, your recipes said you should eat with your hands or fork and knife. But your picture showed two forks. Is that a recommended third conveyance for eating it?

The multiple forks are to share your mochi with friends and family! I did try to eat the mochi with chopsticks and failed miserably. So, I would highly recommend two forks over two chopsticks. I hope you try this recipe!
