Maple Pistachio Goji Berry Chocolate Bark

Festive chocolate bark with a hint of maple packed with pistachios and goji berries! Easy vegan, gluten-free, and oil-free holiday dessert.

With the countdown to Christmas getting closer and closer, I’m finding excuses to throw red and green in everything.

From salads to oatmeal bowls, nothing gets by without a little holiday sprucing.

I’ve had such a sweet tooth, lately.

Anyone else?

If we’re going to be eating all the sweets, we could at least make them festive, right?

This Maple Pistachio Goji Berry Chocolate Bark requires only 4-ingredients, a bit of a sweet tooth, and a lot of holiday cheer!

This chocolate bark was inspired by the Eating Evolved’s Crunchy Caramel Chocolate Bar.

Have you tried it yet?

It looks like your average chocolate bar from the top, but if you flip it over, its got the smatterings of crystallized maple Jackson Polluck style everywhere.

Abstract art at its tastiest.

I incorporated my favorite maple syrup, Coombs Family Farms  into this sweet mix to try make my own.

If you haven’t heard me talk about Coombs before, these Seventh Generation Maple Farmers make the best pure and certified organic maple syrup.

It’s my favorite natural, refined sugar free sweetener for the holiday season, and every season.

Plus the combination of chocolate and maple is one you don’t want to miss!

Enjoy this Maple Pistachio Goji Berry Chocolate Bark as a festive holiday treat to share.

Because it’s gluten free, dairy free, refined sugar free, and oil free, it’s got a little something for everyone.

If you’re nut free, try subbing pumpkin seeds for the pistachios to keep the red and green flair.

I let my bark sit out at room temperature overnight so the maple ribbons crystallize and look sparkly the next morning.

Alternatively, you can omit them for a less fussy but still maple-y chocolate bark.

If you make this Maple Pistachio Goji Berry Chocolate Bark I’d love to hear what you think!

Description

Festive chocolate bark with a hint of maple packed with pistachios and goji berries! Easy vegan, gluten-free, and oil-free holiday dessert.

Ingredients

  • 10 oz. dairy free dark chocolate (70% cacao or higher and refined-sugar-free, if possible!)
  • 2 tsp Coombs Family Farms organic maple syrup
  • 1/4 cup crushed pistachios
  • 1/4 cup goji berries
  • and a few pinches of coarse sea salt (optional)

Instructions

  1. In a large saucepan over low heat, gently melt the chocolate, stirring frequently.
  2. Line a baking sheet with parchment paper and pour the chocolate onto the covered pan. Smooth with a spatula to form a giant oval ~1/4″ thick or desired thickness.
  3. Top chocolate with pistachios, goji berries, maple syrup (optional), and a few pinches of coarse sea salt (optional).
  4. Place baking sheet in the freezer for a few hours to set.
  5. Break into pieces with your hands or a knife. Serve!
  6. Store leftover Maple Pistachio Goji Berry Chocolate Bark in the freezer or fridge until ready to enjoy.

Notes

Recipe adapted from Love & Lemons

If you choose to make “maple ribbons” on the chocolate bark, leave the bark out overnight after freezing to allow the maple syrup to dry out and crystallize.

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I love topping my soup with cilantro, @edenfoods Tamari Roasted Almonds, and @edenfoods Hot Pepper Sesame Oil.

@edenfoods Tamari Roasted Almonds are infrared roasted organic almonds with complimentary organic tamari soy sauce. They’re a delicious snack packed with protein and fiber. You can enjoy them on their own, added to trail mix, on salads and bowls, or…on soup!

@edenfoods Hot Pepper Sesame Oil is a delicious unrefined expeller pressed toasted sesame oil that is infused with hot red chili peppers. Friends, this stuff is HOT! Just a *drop* adds a big kick to your dressings, marinades, stir-fries, etc. If you have a wild side, add a drop or two to your soup bowl for a little extra heat!

Feel free to add your favorites, like roasted chickpeas, green onion, and sesame seeds.
