With the countdown to Christmas getting closer and closer, I’m finding excuses to throw red and green in everything.
From salads to oatmeal bowls, nothing gets by without a little holiday sprucing.
I’ve had such a sweet tooth, lately.
Anyone else?
If we’re going to be eating all the sweets, we could at least make them festive, right?
This Maple Pistachio Goji Berry Chocolate Bark requires only 4-ingredients, a bit of a sweet tooth, and a lot of holiday cheer!
This chocolate bark was inspired by the Eating Evolved’s Crunchy Caramel Chocolate Bar.

It looks like your average chocolate bar from the top, but if you flip it over, its got the smatterings of crystallized maple Jackson Polluck style everywhere.

I incorporated my favorite maple syrup, Coombs Family Farms into this sweet mix to try make my own.

Because it’s gluten free, dairy free, refined sugar free, and oil free, it’s got a little something for everyone.
If you’re nut free, try subbing pumpkin seeds for the pistachios to keep the red and green flair.
I let my bark sit out at room temperature overnight so the maple ribbons crystallize and look sparkly the next morning.
Alternatively, you can omit them for a less fussy but still maple-y chocolate bark.

Description
Festive chocolate bark with a hint of maple packed with pistachios and goji berries! Easy vegan, gluten-free, and oil-free holiday dessert.
Ingredients
- 10 oz. dairy free dark chocolate (70% cacao or higher and refined-sugar-free, if possible!)
- 2 tsp Coombs Family Farms organic maple syrup
- 1/4 cup crushed pistachios
- 1/4 cup goji berries
- and a few pinches of coarse sea salt (optional)
Instructions
- In a large saucepan over low heat, gently melt the chocolate, stirring frequently.
- Line a baking sheet with parchment paper and pour the chocolate onto the covered pan. Smooth with a spatula to form a giant oval ~1/4″ thick or desired thickness.
- Top chocolate with pistachios, goji berries, maple syrup (optional), and a few pinches of coarse sea salt (optional).
- Place baking sheet in the freezer for a few hours to set.
- Break into pieces with your hands or a knife. Serve!
- Store leftover Maple Pistachio Goji Berry Chocolate Bark in the freezer or fridge until ready to enjoy.
Notes

If you choose to make “maple ribbons” on the chocolate bark, leave the bark out overnight after freezing to allow the maple syrup to dry out and crystallize.
