If you’ve been following me on social media, you might have heard the news about my first book. 

Because the cookbook is meal prep inspired, I’ve been living the meal prep lifestyle here at home. 

This means reserving time on Sunday and stuffing lots of fresh food into Tupperware and mason jars. 

You might not equate the holiday season with meal prep, but honestly, it’s one of the times I crave stability the most. 

Amongst a string of holiday commitments and festive food, it’s easy to feel a bit frazzled and malnourished. 

So, it’s amazing to have a fresh meal from the fridge to balance things out between all of the happy chaos. 

These Moroccan Mason Jar Salads are so easy to prepare for a portable lunch that’s packed with raw vegetables, herbs, and a zesty Moroccan inspired dressing.

I’ve prepared a lot of things in mason jars before, but I’ve never thrown a salad into them. 

Until now. 

Here’s what you need to make this Moroccan Mason Jar Salad:

  • cauliflower
  • shredded carrots
  • garbanzo beans
  • green onions
  • parsley
  • cilantro
  • kalamata olives
  • Open Nature® slivered almonds
  • dried cranberries
  • cooked quinoa

That’s it!

You’re going to love the mix of vegetables, herbs, and olives that give this salad a delicious Mediterranean vibe. 

My favorite part are the slivered almonds and cranberries that add texture and sweetness!

Next, mix up a zippy dressing with a tantalizing spice blend of cumin, coriander, turmeric, and cinnamon. 

You need:

  • O Organics® Organic Cumin
  • coriander
  • turmeric
  • O Organics® Organic Cinnamon
  • extra virgin olive oil
  • lemon juice
  • minced garlic 
  • Himalayan sea salt
  • Signature SELECTTM Ground Black Pepper

Blend it up quickly in a high-speed blender or food processor.

Prepping these Moroccan Mason Jar Salads couldn’t be easier. 

Combine all of the dressing ingredients in a blender and mix on high until fully incorporated. 

Pour the dressing into the bottom of each mason jar then layer the salad ingredients to the top.

Refrigerate your mason jars until you’re ready to enjoy them. 

Here’s the trick for serving: tip the mason jars upside down and shake, then remove the lid and serve. 

The dressing will coat the salad ingredients nicely before chowing down!

Cool, right?

I used some of my favorite Safeway products to make this recipe!

Enjoy this Moroccan Mason Jar Salad as an easy meal prep option for a healthy lunch. 

I love how this salad is packed with unique ingredients without your standard leafy green base. 

Each jar is packed with chickpea protein, whole grain quinoa, chopped vegetables, and healthy fats to keep you satiated all day.

I like to make several jars to enjoy for easy pre-made work week lunches.

Grab it, shake it, and serve it!

AND this salad isn’t just for meal prep. 

You can also mix up the ingredients in a large serving bowl tossed with the dressing and serve immediately. 

If you don’t have large mason jars, try using a Tupperware container for similar results.

Description

Make ahead mason jar salads with raw chopped vegetables, chickpeas, quinoa, herbs, and  a zesty Moroccan-inspired dressing. Perfect for meal prep!


Ingredients

Mason Jar Salad:

  • 2 cups cauliflower florets
  • 1 cup shredded carrots
  • 1 can garbanzo beans, drained and rinsed
  • ¼ cup sliced green onions
  • ½ cup chopped parsley
  • ¼ cup chopped cilantro
  • ¼ cup chopped pitted kalamata olives
  • ¼ cup Open Nature slivered almonds
  • dried cranberries
  • ½ cup cooked quinoa

Dressing:

  • 1 tsp O Organics® Organic Cumin
  • 1 tsp coriander
  • ½ tsp turmeric
  • ¼ tsp O Organics® Organic Cinnamon
  • 3 TBSP extra virgin olive oil 
  • 3 TBSP lemon juice or apple cider vinegar 
  • 2 tsp minced garlic 
  • pinch of salt
  • pinch of Signature SELECTTM Ground Black Pepper

Instructions

  1. Combine all dressing ingredients in a blender and mix on high until fully incorporated. 
  2. In a large serving bowl, combine all salad ingredients together and toss gently. 
  3. If eating immediately, pour dressing over salad and mix and serve. If on the go, pour dressing into the bottom of the mason jar, assemble the salad from the top down, so when you turn over the sealed container to mix, the dressing will coat all ingredients. Enjoy!

I started teaching yoga again this spring. In the I started teaching yoga again this spring. In the midst of cookbook edits and stunning spring weather, I felt called to unfurl my Manduka mat and talk my friends and family through a feel-good flow.

At first, I felt rusty; stumbling through cues and postures. What’s that pose, again? What’s that body part? I forgot options; I forgot pacing, I forgot to balance active poses with rejuvenating rest.

But I’m starting to get it back. The confidence that comes with repetition. The joy that comes from seeing a student let go, watching tangible tension melt away; I’m an audience to mindfulness.

I wanted to become a yoga teacher because it felt like the single greatest gift I could give to another human being. Maybe that’s because it’s one of the greatest gift that I give to myself.

As I get back into teaching, I’m reminded that crafting yoga classes is a beautiful, delicate artform. One that I’m excited and eager to get better at.

I teach vinyasa yoga—A creative flow. I’m currently working on theming my classes—conveying a subtle suggested message through movement, music, and words.

Last Friday I taught my book club and I spent hours working on the soundtrack and the sequence. I shifted around openings and contractions, counted things in threes, and shuffled songs in a clear crescendo towards peak posture, softening into savasana.

It reminded me of the English classes I took in high school. We tirelessly underlined paperback books, searching for themes, motifs, and expressive language with a pink highlighter and red ballpoint pen.

Writing a yoga sequence is kind of like that, but in reverse. This time I’m the author, the creator, the conductor, sprinkling in symbols and allusion and foreshadowing to guide towards the truest version of you.

I strive to talk through the poses with expressive language and concise cues. Watching for reactions, feeling what the collective is feeling, working with them to achieve a union of mind, body, and spirit.
