Mix up these quick oatmeal raisin cookie overnight oats for meal prep breakfast with gluten-free oats, raisins, cinnamon, and SunButter.
I never thought I’d admit being sick and tired of a yoga sequence.
But friends, I am officially *over* the yoga sequence I prepared for my Yoga Teacher Training “Teach Out”.
I was up into the wee hours of the night practicing, pacing around my living room while playing and pausing my YYT playlist on Apple Music.
Today is a Sunday, like many other Sundays, but don’t let that fool you.
Today is the day I do my final “teach out” in yoga teacher training.
This is also a special Sunday for you, too!
It’s also the day I share this Oatmeal Raisin SunButter Overnight Oats with you.
Mix them up in advance for a sweet dessert-inspired breakfast conveniently packed into a mason jar.
This past week one of the ways I showed myself some compassion and love was to prepare easy meals in advance.
This allowed ample time for juggling finalizing my yoga routine and creating all the delicious recipes.
These Oatmeal Raisin SunButter Overnight Oats, simply put, are oatmeal raisin cookies in overnight oat form.
No matter what you’re juggling in the AM (and in the PM!) these overnight oats are the answer.
Give yourself the gift of an easy healthy breakfast and the rest will fall into place.
Oatmeal raisin cookies have always been my favorite cookie, despite popular opinion waging against them.
(Side-note: Have you made my Oatmeal Raisin Pecan Cookies yet???)
I guess I’ve always loved raisins, which are SO much more than humiliated grapes (Benny & Joon, anyone?) .
So when it comes to dessert for breakfast, oatmeal raisin cookies feels like an easy bridge to start the day sweet.
These Oatmeal Raisin SunButter Overnight Oats are easily mixed up with just 7 ingredients ahead of time.
Prepping them is much easier than baking cookies with all of the same warming robust flavors.
Here’s what you need to make Oatmeal Raisin SunButter Overnight Oats:
- gluten-free old-fashioned rolled oats
- white chia seeds
- cinnamon
- maple syrup
- Organic SunButter
- unsweetened almond milk
- raisins
That’s it!
I like mixing mine up in Weck jars, but any glass container will work.
The jars start with gluten-free oats soaked in unsweetened almond milk.
Add in chia seeds (or sub flax seed here) to add bulk.
A shake of cinnamon adds flavor and spice.
We keep everything naturally sweet with a drizzle of pure maple syrup.
I always add copious amounts of raisins to mine because, well, I love raisins!
The way they get plump and extra sweet soaked overnight might make you a raisin fan, too.
If you’re absolutely not into raisins but would still love to try this recipe, try adding chocolate chunks, dried cranberries, or dates instead.
The secret ingredient to these Oatmeal Raisin SunButter Overnight Oats is Organic SunButter.
I love adding a spoonful or two of this one ingredient sunflower seed butter to my breakfast in place of nuts or nut butter.
They only ingredient is organic roasted sunflower seeds!
Try adding a few tablespoons of this creamy seed butter to your overnight oats.
It adds a slightly nutty flavor and a rich creamy texture to make these cookie-inspired overnight oats taste like the real deal.
Now that we have everything mixed up– we wait.
I usually make my overnight oats the night before to allow plenty of time for them to soak and thicken prior to serving in the morning.
If you make them the day-of, be sure to let them sit at least 4-6 hours for the oats to soften.
When it’s time to serve, I recommend first checking the texture with a spoon.
If your overnight oats are too runny, add a few extra teaspoons on chia or flax seed to thicken.
If they’re too thick, add in a splash of almond milk until they’re creamy enough.
Voila!
Enjoy these Oatmeal Raisin SunButter Overnight Oats for an easy and nutritious anytime breakfast.
The recipe below serves 2, but you can easily multiply the quantities to make double or triple to prepare multiple jars for the entire week.
Try adding in a tablespoon of your favorite vanilla protein powder for an additional boost of protein!
If you’re feeling extra, try crumbling an *actual* oatmeal raisin cookie on top.
Swoon.
I love topping mine with extra raisins and a few Tablespoons of granola.
Enjoy!

Are you serious Benny and Joon? I thought my husband and I were the only ones that ever heard of / watched (more than once) this movie! You ROCK as always — thanks for the wonderful clean recipes, real life living and humor.
