I’ve been feeling it hard with Flora & Vino, my baby, who will be 1 year old in less than a month!
During my recap, I realized that I hadn’t shared a tofu-based meal with you yet, so I’m remedying that before the new year!
This Orange Ginger Tofu Marinade is the perfect antidote to heavy holiday-meals while still being beautiful festive and oh so tasty.
You just need extra-firm tofu, fresh orange, and a hint of ginger to bring this flavorful ‘fu to life!
What You Need to Make Orange Ginger Tofu Marinade
Protein.
If you’ve been plant-based for a while, I’m sure someone has asked you at some point how you get yours.
At this point, I’ve got my plant-based protein elevator speech memorized by heart and I recite it slam poetry style.
“Legumes, gluten-free grains, protein-rich veggies, nuts, and seeds, oh my!”
Bam.
Sometimes, though, I get so wrapped up in whole plants that I forget that tofu and tempeh can taste pretty tasty, too.
This Orange Ginger Tofu Marinade is one of my favorite ways to enjoy tofu lately.
How to Make Orange Ginger Tofu Marinade
When I’m not scrambling tofu for breakfast, I’m marinading it for dinner.
This marinade is naturally oil-free, gluten-free, and packed with flavor.
Fresh squeezed orange and maple syrup add sweetness and ginger adds a bit of kick.
If you’re in a rush, you can do a super quick tofu press and an abbreviated marinade.
On one or two occasions, I’ve skipped the pressing and the marinading time altogether and the dish still turns out great!
However, if you’ve got the time, allowing the tofu time to press and marinade will only make the orange and ginger flavors richer.
How to Serve Orange Ginger Tofu Marinade
Whip up this Orange Maple Tofu Marinade on weeknights when you’re craving something light and nutritious yet flavorful.
I like mine served with steamed vegetables (asparagus and carrots are excellent), cooked quinoa, and sliced avocado.
It’s also great served alongside a baked potato or sweet potato for restaurant style pairing.
Garnish with sliced blood orange for a dramatic flourish to your holiday spread this season.

Description
Orange ginger tofu marinade perfect as the center to your plant-based meal! Orange, maple, and ginger make tofu taste anything but tasteless.
Ingredients
- 1 16-oz package extra-firm tofu, drained and rinsed
- 1/4 cup fresh squeezed orange juice
- 1 TBSP tamari lite
- 2 tsp maple syrup
- 1/4 tsp garlic powder
- 1/4 tsp ginger
For serving
- steamed vegetables
- avocado
- quinoa
- hemp hearts
Instructions
- Press a package of tofu while making your marinade. If you don’t have a tofu press, wrap the tofu in paper towels and set a heavy pan on top to remove the moisture.
- To a 9 x 13 baking dish, add all marinade contents and whisk to combine with a fork.
- Cut pressed tofu block into long 1/2″ slabs and add to the marinade. Top with fresh orange slices if desired. Place dish in the refrigerator and marinade for at least 1 hour, longer if you have time, flipping once halfway.
- Remove the baking pan from the refrigerator and preheat the oven to 375°F.
- Once the oven is preheated, cover the tofu dish with foil and bake it for 20 minutes, covered.
- After 20 minutes, remove the foil, flip your tofu slabs, and bake for another 15- 20 minutes, or until almost all of the marinade is absorbed and the tofu is lightly browned on the edges.
- While the tofu is baking, prepare your side dishes. I chose steamed asparagus, carrot, and cherry tomatoes.
- Serve the Orange Ginger Tofu on top of a bed of steamed vegetables and quinoa. Brush the tofu with any remaining orange ginger marinade from the pan and garnish with a sprinkle with hemp hearts and sliced avocado.
- Store leftover Orange Ginger Tofu in the refrigerator for 3-5 days and reheat in the microwave before serving.
